Categories     Vegetable

Time 20m

Yield 6 serving(s)

Number Of Ingredients 3

6 medium peeled carrots, cut into 1/4 inch diagonal slices (about 3 cs.)
1 tablespoon honey
1 tablespoon chopped fresh mint leaves or 1 teaspoon dried mint

Steps:

  • In large pan, heat 1 inch of water to boiling.
  • Add carrots and bring water back to boil.
  • Immediately reduce heat, cover pan and simmer about 10 minutes, or until carrots are crisp-tender.
  • Drain well and transfer to serving bowl.
  • Drizzle honey on top and sprinkle mint leaves over all.
  • Toss gently to mix well and serve immediately.

Tips:

  • Choose the right carrots: Look for carrots that are firm and smooth, with no blemishes or cracks.
  • Peel the carrots thinly: This will help the carrots cook evenly and absorb the flavors of the honey-mint sauce.
  • Cut the carrots into uniform-sized pieces: This will also help them cook evenly.
  • Don't overcrowd the pan: When cooking the carrots, make sure there is enough space in the pan so that they can cook evenly without steaming.
  • Use fresh mint: Fresh mint has a much more intense flavor than dried mint, so it's worth using it if you can find it.
  • Don't overcook the carrots: Carrots should be cooked until they are tender but still have a bit of a crunch.
  • Serve immediately: Honey-mint carrots are best served immediately after they are cooked, while they are still hot and flavorful.

Conclusion:

Honey-mint carrots are a delicious and easy-to-make side dish that is perfect for any occasion. They are sweet, savory, and refreshing, and they pair well with a variety of main courses. Whether you are looking for a quick and easy weeknight side dish or a more elegant dish for a special occasion, honey-mint carrots are sure to please.
