TENDER HUNGARIAN CHICKEN LIVERS
Sort of an Hungarian Goulash, but chicken livers-style...In addition, I've used a low-fat sour cream and a whole wheat pasta to lighten the recipe up a bit...Just add a salad for a complete meal!

Tips:
- Choose the right chicken livers: Look for fresh, plump, and evenly-colored chicken livers. Avoid any livers that are bruised, discolored, or have an unpleasant odor.
- Clean the chicken livers thoroughly: Rinse the chicken livers under cold water and remove any excess fat or connective tissue. Slice the livers into bite-sized pieces.
- Use a well-seasoned pan: Preheat a large skillet or sauté pan over medium-high heat. Add a tablespoon of butter or olive oil and swirl to coat the pan. Season the pan with salt and pepper.
- Cook the chicken livers in batches: Do not overcrowd the pan, as this will prevent the livers from cooking evenly. Cook the livers in batches, stirring occasionally, until they are browned on all sides and cooked through.
- Do not overcook the chicken livers: Overcooked chicken livers will become tough and dry. Cook the livers just until they are cooked through, about 5-7 minutes per batch.
- Deglaze the pan with a flavorful liquid: After cooking the chicken livers, deglaze the pan with a flavorful liquid such as white wine, chicken broth, or lemon juice. This will help to loosen any browned bits and add flavor to the sauce.
- Serve the chicken livers immediately: Chicken livers are best served immediately after cooking. They can be served as an appetizer, main course, or side dish. Enjoy!
