Pear Salad with Balsamic and Walnuts image

This pear salad recipe is a stunning fall side dish! Simple, elegant, and delicious, it'd be a great addition to a Thanksgiving or holiday dinner.

4 cups mixed salad greens
2 ripe pears (sliced)
1 fennel bulb (sliced paper thin*)
Lemon wedge
2 tablespoons dried cranberries
1 tablespoon chopped pecans
1 tablespoon chopped walnuts
1 tablespoon chopped hazelnuts (or more pecans or walnuts)
⅓ cup shaved pecorino
Balsamic Vinaigrette (for drizzling)
Sea salt and freshly ground black pepper

Steps:

  • Assemble the salad with the mixed greens and top with the pears and fennel. Squeeze a little lemon over the pears and fennel and toss.
  • Top with the cranberries, pecans, walnuts, hazelnuts, and pecorino. Drizzle with balsamic vinaigrette. Season to taste with salt and pepper.

A wonderful blend of mixed greens, pears, toasted walnuts and Gorgonzola (blue cheese) with a light tasty dressing.

2 pears - peeled, cored and sliced
1 cup port wine
2 shallots, thinly sliced
1 clove garlic, minced
1 tablespoon Dijon mustard
2 tablespoons balsamic vinegar
6 cups assorted salad greens
1 cup crumbled Gorgonzola cheese
1 cup chopped walnuts, toasted

Steps:

  • Preheat the oven's broiler. Arrange pear slices in a single layer on a baking sheet. Broil until nicely browned, 3 to 5 minutes. Set aside to cool.
  • Pour port wine into a saucepan. Bring to a boil, and cook until the wine is reduced by 1/2. Remove from the heat and cool. Pour the cooled wine into a blender or food processor, and add the shallots, garlic, mustard, and vinegar. Puree until smooth.
  • Divide the salad greens evenly between four serving plates. Arrange some of the broiled pear slices over each pile of greens. Sprinkle with Gorgonzola cheese. Drizzle dressing over each plate, then sprinkle with walnuts. If you like, this can also be made in one large bowl instead of individual servings.

This crispy, sweet salad is so quick and easy to make for a light summer dish. This salad would also be delicious using apples too. To add a bit more crunch, I also added a few toasted pecans. I found this recipe in a Good Housekeeping magazine.

1 large boston lettuce, torn into bite-sized pieces
1 tablespoon olive oil (butter can also be used)
2 firm but ripe bosc pears or 2 Anjou pears, cored and cut lengthwise into 8 wedges
1/4 cup cider vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper, coarsely ground

Steps:

  • In large serving bowl, place lettuce.
  • In 12-inch nonstick skillet, heat oil (or butter) on medium-heat 1 minute. add pears and cook 10 to 15 minutes or until they begin to soften and turn golden.
  • Meanwhile, in cup, stir vinegar, Dijon mustard, sugar, salt, and pepper.
  • Add vinegar mixture to pears in skillet, and cook 1 minute or until liquid begins to thicken.
  • Pour pears and liquid from skillet into bowl with lettuce, toss to coat. Serve immediately.

Light and fluffy, this colorful salad is a very flavorful family favorite. When I made it for my husband's family before we were married, we all joked about not being able to find any pears, so the name stuck.

1 can (16 ounces) pears, liquid drained and reserved
1 package (3 ounces) lime gelatin
3 ounces cream cheese, softened
1/4 teaspoon lemon juice
1 envelope whipped topping mix (Dream Whip)
Lettuce leaves

Steps:

  • In a saucepan, bring pear liquid to a boil. Stir in gelatin until dissolved. Remove from the heat; cool at room temperature until syrupy. Meanwhile, puree pears in a blender. , In a bowl, beat cream cheese and lemon juice until fluffy and smooth. Add pureed pears and mix well. Prepare whipped topping according to package directions; fold into pear mixture. Fold in cooled gelatin. , Pour into a 4-1/2-cup mold that has been coated with cooking spray. Chill overnight. Just before serving, unmold salad onto a lettuce-lined platter.

6 lettuce leaves
6 pears, in halves (canned or fresh pears)
12 tablespoons raspberry yogurt
12 teaspoons pecans, chopped

Steps:

  • Put one lettuce leaf on each of six salad plates.
  • If using fresh pears, peel, core and cut in half.
  • Top each lettuce leaf with two pear halves.
  • Put 1 T of yogurt on each pear half.
