INSIDE-OUT BRUSSELS SPROUTS
Meet the Cook: There were seven of us children when I was a girl, and I was the second oldest. I began cooking as soon as I could reach the stove and stir a pot. I'm a widow, so I usually make this for large gatherings. It's so quick and easy. The recipe was given to me when my husband and I were caring for foster children who enjoyed beef dishes. I've been fixing it ever since. -Shirley Max, Cape Girardeau, Missouri

Tips:
- Choose the right Brussels sprouts: Look for small, firm sprouts with tightly closed leaves. Avoid any that are yellowed or bruised.
- Trim the sprouts: Cut off the stem end of each sprout and remove any wilted or damaged leaves.
- Blanch the sprouts: This will help to tenderize them and maintain their bright green color. Bring a large pot of salted water to a boil and add the Brussels sprouts. Cook for 2-3 minutes, or until the sprouts are tender-crisp. Immediately transfer the sprouts to a bowl of ice water to stop the cooking process.
- Prepare the filling: While the sprouts are blanching, prepare the filling. This can be anything from a simple mixture of breadcrumbs and Parmesan cheese to a more elaborate filling made with sautéed vegetables, meat, or seafood.
- Stuff the sprouts: Once the sprouts are cool enough to handle, use a small spoon or your fingers to stuff each sprout with the filling. You can also wrap each sprout with a slice of bacon or prosciutto before baking.
- Bake the sprouts: Place the stuffed sprouts in a single layer on a baking sheet. Drizzle with olive oil or melted butter and season with salt and pepper. Bake in a preheated oven at 400°F for 15-20 minutes, or until the sprouts are heated through and the filling is golden brown.
