cooking spray
1 c all-purpose flour
1 c yellow cornmeal
2 tsp baking powder
1/4 tsp salt
2 large eggs
1/2 c lite corn syrup
1/4 c mazola cooking oil
1 c cream-style corn
4 oz shredded monterey jack cheese
2 Tbsp chopped jalapeno pepper

Steps:

  • 1. preheat oven to 400°F. Spray 12 muffin cups with cooking spray; set aside.
  • 2. In a medium bowl, combine flour, cornmeal, baking powder, and salt.
  • 3. In a large bowl, combine eggs, corn syrup, and oil. Stir in the flour mixture until well blended. Stir in the corn, cheese, and chopped jalapeno. Spoon into prepared muffin cups.
  • 4. Bake for 15 to 20 minutes or until lightly browned and firm to the touch. Cool in pan for 5 minutes on wire rack. Remove from pan and serve.

Tips:

  • Use fresh or frozen corn: Fresh corn on the cob is best, but frozen corn can also be used. If using frozen corn, be sure to thaw it completely before using.
  • Use a good quality cornmeal: Stone-ground cornmeal will give your muffins a more rustic flavor and texture than all-purpose flour.
  • Don't overmix the batter: Overmixing will make your muffins tough. Mix just until the ingredients are combined.
  • Bake the muffins at a high temperature: This will help them rise and give them a crispy crust.
  • Let the muffins cool slightly before serving: This will allow them to set and firm up.

Conclusion:

Jalapeno corn muffins are a delicious and easy-to-make snack or side dish. Their sweet and savory flavor, crispy crust, and fluffy interior are sure to please everyone. Whether you're serving them at a party or enjoying them as a quick snack, these muffins are sure to be a hit.
