Time 1h50m

Yield 4 serving(s)

Number Of Ingredients 10

2 tablespoons butter
2 tablespoons olive oil
1 large yellow onion, chopped
1 tablespoon minced fresh garlic
4 cups ground tomatoes
1 cup chicken broth
1 teaspoon oregano
salt and pepper, to taste
1/2 cup heavy cream or 1/2 cup half-and-half cream
1/4 cup chopped fresh basil

Steps:

  • Melt the butter with the oil over low heat in a heavy bottom pot.
  • Add the onion; wilt over low heat for 8 to 10 minutes. Add the garlic during the last 2 minutes, stirring.
  • Add the tomatoes and broth. Bring to a boil, reduce heat to a simmer and cover; cook over medium-low heat for 60 minutes. Season with oregano, salt, and pepper.
  • Add basil. Stir in the cream or half & half, simmer for another 30 minutes.
  • Garnish with fresh basil before serving.
  • Note: When tomatoes are in-season use fresh tomatoes, blanch for 8 minutes and process with food processor. In the winter, use a San Marzano-type canned tomato, drain half of the liquid and process in food processor.

TOMATO BASIL SOUP

A creamy rendition of a traditional favorite. This has made me a SouperHero in my house. This meal is full-bodied enough to not need the addition of a sandwich; however, garlic bread is nice for dipping.

MY AMAZING TOMATO BASIL SOUP (LIKE APPLEBEE'S®)

My Amazing Tomato Basil Soup (Like Applebee's®) image

This tastes just like the tomato basil soup they serve at Applebee's®. The hubs loved it so that's saying something! I always add a pinch of sugar to tomato-based sauce, but I'm not sure that it needed it. Served it with baked fries with seasoned salt and grilled gouda cheese sandwiches on thick crusty bread, panini-style.

Tips:

  • Use fresh, ripe tomatoes. This will give your soup the best flavor. If you can't find fresh tomatoes, you can use canned tomatoes, but make sure to drain them well before adding them to the soup.
  • Roast the tomatoes before adding them to the soup. This will help to concentrate their flavor and give the soup a richer, deeper taste.
  • Use a variety of herbs and spices. This will give your soup a more complex flavor. Some good options include basil, oregano, thyme, rosemary, garlic, and onion.
  • Don't overcook the soup. The tomatoes should be soft, but they should still retain some of their texture. If you overcook the soup, it will become mushy and bland.
  • Serve the soup with a dollop of sour cream or yogurt. This will add a creamy, tangy flavor to the soup and help to balance out the acidity of the tomatoes.

Conclusion:

Joe's Italian tomato basil soup is a delicious and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to use up leftover tomatoes. With its fresh, flavorful ingredients and simple preparation, this soup is sure to be a hit with your family and friends.
