KIELBASA APPLE KABOBS

Kielbasa Apple Kabobs image

This is a super simple recipe I copied from the Whole Foods Market website. The grilled kielbasa have such a wonderful flavor. You can even use turkey kielbasa to save on calories and fat. I use more apple just because my kids like the way they taste off the grill. It's okay to let the ingredients sit in the lemon juice mixture for a few minutes. I was concerned about that at first, but it does not overpower or alter the flavor of the dish. I also don't use the skewers. I use a grilling basket - it's much faster!! I serve with couscous.

nonstick cooking spray

2 tablespoons all-purpose flour
1 cup shredded cheese (4 ounces)
1/2 teaspoon salt
1/2 teaspoon bottled hot pepper sauce
3 medium fuji or jonathan apples, cored and cut into 1/2-inch cubes (you want a fine-grained apple in order to avoid the apples getting too mushy when cooked)

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes

Time 1h

Number Of Ingredients 9

1 small red cabbage (about 1 1/2 pounds), cut into 1 1/2-inch-thick wedges
2 small red onions, peeled and cut into 1-inch-thick wedges
2 tablespoons extra-virgin olive oil
5 tablespoons cider vinegar
2 teaspoons caraway seeds
Coarse salt and freshly ground pepper
3 small Gala apples (about 1 1/4 pounds), halved lengthwise and cored
1 1/2 pounds smoked kielbasa, slashed 1/4-inch deep in a few places
Whole-grain mustard, for serving

Steps:

  • Preheat oven to 400 degrees. Toss together cabbage, onions, oil, 3 tablespoons vinegar, and caraway seeds on a rimmed baking sheet; generously season with salt and pepper. Spread into a single layer and roast 25 minutes.
  • Gently turn vegetables. Add apples, cut side down, and kielbasa to baking sheet, keeping everything in a single layer. Roast until cabbage is crisp-tender and apples are tender and slightly collapsed, 20 to 25 minutes. Sprinkle with remaining 2 tablespoons vinegar. Slice kielbasa and divide equally among 4 plates with vegetables and apples. Serve with mustard.

Tips:

  • Choose high-quality kielbasa: Opt for a flavorful, well-seasoned kielbasa that holds its shape when cooked. Smoked or garlic kielbasa are popular choices.
  • Marinate the kielbasa: Marinating the kielbasa in a flavorful mixture of spices, herbs, and liquids adds extra flavor and moisture. Popular marinade ingredients include olive oil, soy sauce, Worcestershire sauce, paprika, garlic, and brown sugar.
  • Use a variety of vegetables: Experiment with different types of vegetables to create colorful and flavorful kabobs. Common choices include bell peppers, onions, mushrooms, zucchini, and cherry tomatoes.
  • Keep the pieces uniform: Cut the kielbasa and vegetables into similar-sized pieces to ensure even cooking.
  • Skewer the kabobs properly: Alternate pieces of kielbasa, vegetables, and any other desired ingredients onto the skewers, leaving a little space between each piece to allow for expansion during cooking.
  • Cook the kabobs over medium heat: Grill or pan-fry the kabobs over medium heat to prevent burning and ensure thorough cooking.
  • Serve with a dipping sauce: Offer a dipping sauce alongside the kabobs to enhance the flavors. Popular choices include barbecue sauce, honey mustard, or tzatziki sauce.

Conclusion:

Kielbasa kabobs with apple offer a delicious and versatile grilling option that combines the savory flavors of kielbasa with the sweet and tangy taste of apples. By following these tips and using high-quality ingredients, you can create flavorful and visually appealing kabobs that are sure to be a hit at your next barbecue or gathering. In addition to the tips provided, here are some additional points to consider: - For a healthier version of the kabobs, grill them instead of pan-frying them. - If you don't have wooden skewers, you can use metal skewers. Just be sure to soak them in water for at least 30 minutes before using to prevent them from burning. - Serve the kabobs with a side of grilled vegetables or a fresh salad for a complete meal.
