Steps:
- 1. combine honey and lavender in a small sauce pan cook over medium heat for 8 minutes, stir constantly
- 2. using a small wire mesh strainer pour infused honey into a small jar or bowl, allow to cool
- 3. Use as you would regular honey, I wait for mine to cool and then transfer it back into the original honey bottle
- 4. Be sure not to cook over the 8 minutes, warming the honey does change the consistency to a slightly thicker texture but it is not really noticeable,
Tips:
- Choose fresh, fragrant lavender blossoms. The quality of your honey will depend on the quality of your lavender. Make sure to use fresh, fragrant blossoms that have not been treated with pesticides or herbicides.
- Harvest lavender blossoms at the right time. Lavender blossoms are best harvested when they are just beginning to open. This is typically in the months of June and July.
- Dry lavender blossoms before using them. Drying lavender blossoms will help to preserve their flavor and aroma. To dry lavender blossoms, simply spread them out on a baking sheet in a single layer and place them in a warm, dry place for 2-3 days.
- Use a ratio of 1 part lavender blossoms to 2 parts honey. This ratio will produce a honey that is flavorful and aromatic, without being too overpowering.
- Infuse honey for at least 2 weeks. The longer you infuse honey, the more flavorful and aromatic it will become. However, you can start using the honey after just a few days if you prefer.
- Store infused honey in a cool, dark place. This will help to preserve its flavor and aroma. Infused honey can be stored for up to a year.
Conclusion:
Lavender-infused honey is a delicious and versatile ingredient that can be used in a variety of recipes. It can be used to sweeten tea, coffee, yogurt, or oatmeal. It can also be used as a glaze for roasted vegetables or chicken. Or, it can be simply enjoyed on its own. No matter how you choose to use it, lavender-infused honey is sure to add a touch of flavor and elegance to your dishes.
