This is phenomenal and easy. I varied it a little by doing half cherries and half peaches and adding a little cinnamon and lemon. Recipe posted as written. Serving size is estimated.

Time 1h15m

Yield 8-10 serving(s)

Number Of Ingredients 6

1/2 cup butter
1 cup self rising flour
1 cup sugar
1 cup milk
1 teaspoon vanilla
1 (20 ounce) can peach slices in heavy syrup (or any other fruit you like. This is very good with a mix of blackberries and peaches!)

Steps:

  • Pre heat oven to 350.
  • place stick of butter in 9x13 size casserole pan and let sit in oven during preheating to melt butter.
  • Mix flour, sugar, milk and vanilla with blender until well mixed.
  • Pour batter over melted butter.
  • Pour fruit and juice evenly over batter. (My husband prefers more bread, less juice so I drain half.).
  • Bake for 1 hour.
  • Serve warm with ice cream.

Tips:

  • Choose flavorful ripe peaches. They should be aromatic and slightly soft when gently pressed.
  • If you don't have self-rising flour, you can make your own by adding 1 ½ teaspoons baking powder and ½ teaspoon salt to each cup of all-purpose flour.
  • Add a tablespoon of lemon juice to the peaches before adding the sugar and cornstarch. This will help to prevent the peaches from browning.
  • If you don't have a 9-inch pie pan, you can use an 8-inch pan. Just reduce the amount of filling and crust ingredients by about 1/3.
  • Be sure to preheat your oven to 350 degrees Fahrenheit before baking the cobbler.
  • Bake the cobbler for about 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  • Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream.

Lazy Man's Pie Peach Cobbler is a delicious and easy-to-make dessert that is perfect for summer. With its simple ingredients and minimal effort, this cobbler is sure to be a hit with everyone.
