2 cups vanilla yogurt
2 Tbsp. chopped fresh chives
2 Tbsp. chopped fresh dill
1 tsp. grated lemon zest
1 tsp. salt
1/2 tsp. minced garlic
1/8 tsp. pepper
4 cups assorted cut-up fresh vegetables (sliced cucumbers, carrots and red peppers)

Steps:

  • Place yogurt in cheesecloth-lined colander; cover. Drain over bowl in refrigerator at least 6 hours or overnight.
  • Spoon drained yogurt into small bowl. Discard liquid. Add chives, dill, lemon zest, salt, garlic and pepper into yogurt cheese; stir until well blended. Cover.
  • Refrigerate at least 2 hours. Serve as a dip with the cut-up vegetables.

1/4 cup finely chopped shallot
1 teaspoon minced garlic
2 tablespoons freshly squeezed lemon juice
7 ounces Greek-style yogurt, such as Fage Total
1/2 cup good mayonnaise, such as Hellmann's
4 ounces sharp (mountain) Gorgonzola, crumbled
5 dashes Tabasco sauce, or to taste
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons minced fresh chives
Crudites and/or crackers, for serving

Steps:

  • Place the shallot, garlic, lemon juice, yogurt, mayonnaise, Gorgonzola, Tabasco, salt, and pepper in the bowl of a food processor fitted with the steel blade. Pulse the processor about 12 times, until the mixture is almost smooth but still a bit chunky. Add the chives and pulse two or three times, until combined. Transfer to a serving bowl, cover with plastic wrap, and chill for at least 2 hours to allow the flavors to develop. Serve with vegetables and/or crackers for dipping.

1/2 teaspoon salt

Steps:

  • Line a strainer with four layers of cheesecloth or one coffee filter and place over a bowl. Place yogurt in prepared strainer; cover yogurt with edges of cheesecloth. Refrigerate for 8 hours or overnight., Remove yogurt from cheesecloth and discard liquid from bowl. Combine sesame seeds, salt, cayenne and cumin. Spread yogurt on a serving plate. Drizzle with oil. 1 cup whole milk Greek yogurt
Kosher salt and freshly ground black pepper
1 pound fettuccine
1 cup crumbled feta
2 cloves garlic, grated
Zest and juice of 1 lemon
2 tablespoons extra-virgin olive oil
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh mint
3 tablespoons chopped fresh oregano
3 tablespoons chopped fresh parsley
Freshly grated Pecorino-Romano cheese, to garnish

Steps:

  • Set the yogurt in a sieve set over a bowl to strain and come to room temperature, about 1 hour.
  • Fill a large pot with water and bring to a boil. Season generously with salt. Add fettuccine and cook until al dente, about 2 minutes less than the box instructions. Drain, reserving 1 cup pasta water.
  • Combine feta, yogurt, garlic, lemon zest and juice, olive oil and half the herbs in a large bowl, then season with salt and pepper. Mix until well blended.
  • Add the hot cooked pasta and toss to coat. Add some pasta water until sauce is at desired consistency. Taste and adjust seasoning. Transfer to serving bowls and garnish with Pecorino-Romano and the remaining chopped herbs.

3 tablespoons minced fresh chives

Steps:

  • Heat a grill or a grill pan over high.
  • As pan heats up, prepare the scallion-herb mixture: Halve 2 scallions lengthwise, then slice very thinly crosswise. Transfer to a medium bowl. Stir in chives and dill, if using. Season with salt and pepper, and set aside.

1 quart homemade yogurt or store-bought plain low-fat yogurt

140 g low-fat yogurt (see Note #2)
1 garlic clove (crushed)
2 green onions (finely chopped)

2 tablespoons of fresh mint (chopped, may use coriander)
1/4 teaspoon cumin
