Time 1h20m

Yield 12

Number Of Ingredients 9

1 ⅛ cups all-purpose flour
⅓ cup confectioners' sugar
½ cup butter, softened
2 eggs
⅔ cup confectioners' sugar
⅓ cup fresh lemon juice
1 ½ teaspoons grated lemon zest
¼ teaspoon baking powder
2 tablespoons confectioners' sugar, or as needed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a medium bowl, mix together the flour, 1/3 cup of confectioners' sugar, and butter until butter is in very small crumbs. Press into the bottom of a 11x7-inch pan.
  • Bake for 25 minutes in the preheated oven, or until firm and lightly browned. While the crust is baking, whisk together the eggs, 2/3 cup of confectioners' sugar, lemon juice and lemon zest in a medium bowl. Just before the crust is done, stir in the baking powder. Pour over the crust while it is hot, and return to the oven.
  • Bake for another 25 minutes in the preheated oven, until set. Dust with remaining confectioners' sugar when cool.

Tips:

  • Use fresh lemons. Fresh lemon juice and zest provide the best flavor for these bars. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will not be as bright.
  • Don't overmix the batter. Overmixing the batter will make the bars tough. Mix just until the ingredients are combined.
  • Bake the bars until they are just set. The bars should be slightly soft in the center when you take them out of the oven. They will continue to firm up as they cool.
  • Chill the bars before serving. Chilling the bars for at least 30 minutes before serving will help them to set and firm up.

Conclusion:

Lemon love bars are a classic dessert that is perfect for any occasion. They are easy to make and always a hit with a crowd. The combination of tart lemon and sweet, buttery crust is irresistible. If you are looking for a delicious and easy dessert to make, these lemon love bars are the perfect choice.
