Tips:

  • For a perfectly flaky crust, use cold butter and ice water. Grate the butter into the flour mixture, then use your fingers to work it in until it resembles coarse crumbs.
  • Don't overmix the dough. Once the dough just comes together, stop mixing. Overmixing will make the crust tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will help the dough to relax and make it easier to work with.
  • When rolling out the dough, use a light touch. Don't press down too hard, or the dough will become tough.
  • If the dough is sticking to the rolling pin, lightly flour the rolling pin and the work surface.
  • To make sure the pie crust is evenly browned, rotate the pie plate in the oven halfway through baking.
  • Let the pie cool completely before slicing and serving. This will help the filling to set and make it easier to slice.

Conclusion:

This light and luscious lemon-pineapple pie is the perfect dessert for any occasion. With its creamy filling, flaky crust, and refreshing lemon-pineapple flavor, it's sure to be a hit with everyone who tries it. So next time you're looking for a delicious and easy-to-make dessert, give this lemon-pineapple pie a try. You won't be disappointed!
