  • Topping: Preheat oven to 375°F with racks in center and bottom. Place a sheet of foil on bottom rack (to catch drips). Whisk together flour, coconut, baking powder, salt, and lime zest. 5 large egg yolks
2/3 cup plus 1 Tablespoon key lime juice
2 teaspoons key lime zest

Steps:

  • Preheat oven to 350* & Prepare Crust: Spread coconut in a pie plate in an even layer and toast, stirring occassionally, until golden. 10-12 minutes. Cool to room temperature (about 10 minutes). Pulse together flour, confectioners sugar and salt in food processor. Add coconut, butter and 1 Tablespoon (may need 2 T.) cold water. Process until dough just begins to form a ball. Press dough onto bottom and up the sides of a 10" tart pan, freeze until firm, about 10 minutes. Place parchment paper over crust & fill with pie weights. Place on a baking sheet and bake until golden about 20-25 minutes, cool completely on a rack. Pinch of salt
2 1/4 cups sweetened shredded coconut
1 1/4 cups sugar
4 large eggs, separated
1 tablespoon unsalted butter, melted
2 large egg yolks
4 tablespoons unsalted butter, melted
1/4 teaspoon cream of tartar
3/4 cup freshly squeezed lime juice
Finely grated zest of 1 lime
3/4 cups sugar cookie or graham

Steps:

  • Combine the topping and crust ingredients. Press one half of the mixture into the bottom and sides of an ungreased 10-inch glass or ceramic pie plate, building up the sides to the top of the plate to form an edge. Reserve remaining mixture for the topping. To make the lime curd, combine the butter, lime juice, cornmeal, salt and 3/4 cup of the sugar in a large bowl over a pan of simmering water with the bottom not touching the water, and slowly cook, scraping the sides of the bowl and whisking occasionally, another 15 minutes, or until thickened. Cover with plastic and refrigerate. Stir the curd every 10 minutes or so to cool evenly.

Gently press the sides in so the top 1/2 inch of the crust remains bare. Bake 45 minutes, or until the pie has risen and coconut is golden brown.
