1 large egg, beaten
1/4 cup sugar
1/4 cup butter
1/4 cup lime juice
1 teaspoon grated lime zest
2 drops green food coloring
2/3 cup whipped cream

Steps:

  • In the top of a double boiler, combine the egg and sugar. Cut the butter into tablespoons; add to double boiler. Add lime juice and zest; cook and stir over boiling water for 8 to 10 minutes or until thick. Remove from the heat; add food coloring. Cool. Fold in the whipped cream. Chill for at least 1 hour.

1/2 cup firm butter or margarine
1/2 cup finely chopped walnuts or pecans
1 teaspoon grated lime peel
1 can (14 oz) sweetened condensed milk (not evaporated)
1/2 cup Key lime juice or regular lime juice
2 teaspoons grated lime peel, if desired
2 cups whipping cream
Few drops green food color, if desired

Steps:

  • Heat oven to 350°F. Place flour in medium bowl. Cut in butter, using pastry blender (or pulling 2 table knives through flour in opposite directions), until evenly mixed. Stir in walnuts and 1 teaspoon lime peel. Press evenly in bottom of ungreased 9-inch square pan.
  • Bake about 15 minutes or until light brown. Cool completely, about 30 minutes.

1/3 cup sugar
1/2 cup butter, melted
FILLING:
1 package (3 ounces) lime gelatin
1 cup boiling water
11 ounces cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
1 carton (16 ounces) frozen whipped topping, thawed
