Steps:
- In a saucepan over low heat, combine the evaporated milk, sweetened condensed milk, milk, and heavy cream. Cook until warm, whisking frequently. Once the mixture is hot to the touch, whisk in the gelatin mix and sugar, stirring constantly until sugar and gelatin are completely dissolved. Whisk in the egg yolks, and remove from the heat. Stir in the lime juice and lemon extract.
- Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. This recipe takes a bit longer to set up than the usual ice cream.
- Once the ice cream is thick, open the canister, and place large pieces of graham cracker evenly on each side. They will break into smaller pieces as the machine churns. Mix for about 5 more minutes. Transfer to a freezer container, seal, and freeze until solid. I like to use 1 gallon resealable freezer bags.

CASHEW CRUSTED KEY LIME PIE WITH A WHIPPED CREAM FRUIT COULIS
Steps:
- Preheat the oven to 325 degrees F.
- Grease a 9-inch pie pan and set aside. In a small bowl, mix together the cashews, graham cracker crumbs, 1/2 cup sugar, and the melted butter (you may choose to process the cashews and graham crackers in a food processor to finely grind them). Press crumb mixture into the bottom and sides or pie pan.
- In a medium mixing bowl, combine the sweetened condensed milk and egg yolks until smooth, mixing either by hand or with an electric mixer. Slowly add the Key lime juice and mix to incorporate. Pour into the unbaked crust and bake for 50 minutes or until center is set. Cool pie to room temperature; then refrigerate for several hours.
- When pie is cool, make the whipped topping. In the bowl of an electric mixer, whip the heavy cream, orange zest, and remaining 2 ounces of sugar until it has reached the consistency of whipped cream. Spread whipped topping evenly over the cooled pie. The pie can be served immediately or allowed to set before serving.
LIME-COCONUT CREAM-PIE JARS
These individual cream "pies" get their silkiness from coconut milk and a zesty lift from limes. They're also fun to make, especially if you have kids who love spooning stuff into containers. Bake the graham-cracker crust and divide it into mini jars, add a tier of custard and another of whipped cream, and finish with toasted coconut flakes and more zest.

Steps:
- Preheat oven to 350°F with racks in upper and lower thirds. Pulse graham crackers in a food processor until finely ground. Add butter, 1 tablespoon granulated sugar, and 1/8 teaspoon salt; pulse to combine. Spread mixture in a single layer on a baking sheet. Spread coconut flakes in an even layer on another rimmed baking sheet.
- Place both sheets in oven; bake until coconut is golden, 8 to 10 minutes; and graham-cracker mixture is darker-golden and fragrant, 10 to 12 minutes. Let coconut cool completely (it can be stored in an airtight container up to 1 week). Divide graham-cracker mixture evenly among six 8-ounce glass jars or glasses; gently press to create an even layer (a metal ice cream scoop is great for this). Transfer to refrigerator.
- Whisk together cornstarch and remaining 3/4 cup granulated sugar and 1/2 teaspoon salt in a medium saucepan. Add egg yolks; whisk to combine. Whisk in coconut milk and half and half; cook over medium-high heat, stirring constantly, until bubbling and thick, about 4 minutes. Continue to boil, whisking constantly, 2 minutes more. Remove from heat; stir in lime zest and juice and sweetened coconut. Add butter; whisk until melted.
- Transfer pudding to a large heat-proof liquid measure with a spout; let cool about 10 minutes. Divide pudding among jars, place a piece of plastic wrap directly on the surface of each (to stop skins from forming), and refrigerate until firm, at least 1 1/2 hours and up to 2 days.
- Whisk cream and confectioners' sugar until soft peaks form. Dollop mixture on top of puddings and refrigerate, uncovered, up to 1 hour, or serve immediately, topped with toasted coconut and more lime zest.

KEY LIME OR LEMON ICE CREAM PIE
I found this recipe years ago and in it's original form has frozen lemonade concentrate. It's delicious and refreshing whether you make key lime or lemon.. I've created my own version by adding juice and zest. The juice and zest add great flavor and an extra kick. It's easy to change up the ingredient to make your own citrus...

FLUFFY LIME CREAM PIE
Steps:
- Crust: Preheat oven to 375. In medium bowl, combine crumbs, sugar and melted butter. Toss till crumbs are coated with butter. Lightly press into 9" pie plate, even thickness. Bake 8 minutes, until set and browned. Cool. Reduce temperature to 300. Filling: Beat egg yolks in large bowl till light in colour. Gradually beat in lime juice, then sweetened condensed milk. Using clean beater and bowl, beat egg whites with salt until soft peaks form. Gradually add sugar and continue beating until stiff peaks form. Using rubber spatula, quickly, but gently fold in 1/3 of the whites into yolk mixture. Fold in remaining whites. Pile mixture into shell and bake for 15 minutes. Cool to room temperature, then refrigerate 6 hours or overnight. Top with whipped cream and garnish with lime slices.
Tips:
- Choose ripe limes. The flavor of your pie will be best if you use limes that are at their peak ripeness. Look for limes that are deep green in color and feel heavy for their size.
- Use a quality graham cracker crust. The crust is an important part of any pie, so don't skimp on quality. Look for a graham cracker crust that is made with real graham crackers and butter.
- Don't overbeat the cream cheese. Overbeating the cream cheese can cause it to become grainy. Beat it just until it is smooth and creamy.
- Chill the pie before serving. This will help the pie to set and make it easier to slice.
- Serve the pie with whipped cream or fresh berries. This will add a delicious finishing touch to your pie.
Conclusion:
Lime cream pie is a classic dessert that is perfect for any occasion. It is easy to make and always a crowd-pleaser. With its bright and tangy flavor, lime cream pie is sure to be a hit with everyone who tries it.
