Steps:
- Mix all the dry ingredients together first.
- Add in the carrots, applesauce, water, an raisins.
- Spray cookie sheets with non stick, butter flavored cooking spray and drop by heaping teaspoonfuls onto the cookies sheets 1 1/2 inches apart from one another. Make sure to flatten the cookies slightly because they will not really "spread out" at all.
- Bake at 275 degrees (yes, thats right -- 275!) for 18 minutes. DO NOT OVER BAKE.
- Let rest for a minute or two on the sheets before removing. Store in an air tight container and enjoy!
Tips:
- For a moist and flavorful carrot cake muffin, use freshly grated carrots. Grating your own carrots ensures that they are fresh and have a more intense flavor than pre-packaged shredded carrots.
- Don't overmix the batter. Overmixing can result in tough, dense muffins. Mix the batter just until the ingredients are combined.
- Use a light hand when measuring the flour. Too much flour can make the muffins dry and crumbly. To ensure accurate measurements, spoon the flour into the measuring cup and level it off with a knife.
- Fill the muffin cups about 2/3 full. This will prevent the muffins from overflowing and creating a mess in your oven.
- Bake the muffins at a moderate temperature (350°F) for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This will help prevent the muffins from breaking.
Conclusion:
These low-fat carrot cake muffins are a delicious and healthy way to enjoy your favorite carrot cake flavor. They are moist, flavorful, and have a tender crumb. With a few simple tips, you can easily make these muffins at home and enjoy them with your family and friends.
