LUSCIOUS LEMON COOKIES

My Dad adores lemon. I created these to give to him as part of a tray of cookies for Valentine's Day.

Provided by Laurie Gordon

Categories     Cookies

Time 20m

Number Of Ingredients 7

1/3 c butter (softened)
1/4 c crisco shortening sticks (butter flavored)
2 eggs
1 Tbsp vanilla extract
1/8 tsp lemon extract
1 box dunkin hines lemon supreme cake mix
1 box lemon jello (3 oz) can sub in sugar free if you want

Steps:

  • 1. Preheat oven to 350. Line cookie sheets with parchment paper (do NOT spray with cooking spray)
  • 2. Cream together softened butter and shortening stick.
  • 3. Incorporate eggs one at a time until well blended, then add in vanilla and lemon extract.
  • 4. Add cake mix and jello mix and mix well, scraping sides of mixer often.
  • 5. Using two spoons or hands, drop by balls and then flatten onto parchment paper. Bake at 350 for 7 to 10 minutes, depending on your oven. Watch carefully at the end so they don't burn.
  • 6. OPTIONAL: For even more lemon flavor, frost with lemon frosting.

Tips:

  • Use fresh lemons. Fresh lemons will give your cookies the best flavor. If you can, use organic lemons to avoid pesticides and waxes.
  • Zest your lemons finely. Finely zested lemons will distribute the flavor more evenly throughout your cookies.
  • Cream the butter and sugar together until light and fluffy. This will help your cookies be light and airy.
  • Add the eggs one at a time, beating well after each addition. This will help prevent your cookies from curdling.
  • Gradually add the flour to the wet ingredients. Adding the flour all at once can make your cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help your cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at 350 degrees Fahrenheit for 10-12 minutes, or until they are just set. Overbaking will make your cookies dry and crumbly.
  • Let the cookies cool on a wire rack before serving. This will help them firm up and prevent them from breaking.

Conclusion:

Lemon cookies are a classic treat that are perfect for any occasion. They are easy to make and can be enjoyed by people of all ages. With their bright citrus flavor and soft, chewy texture, lemon cookies are sure to be a hit at your next gathering.
