Categories     Dessert

Time 27m

Yield 18 cookies, 18 serving(s)

Number Of Ingredients 5

1 cup peanut butter (creamy or crunchy)
1 cup sugar substitute (Splenda)
1/3 cup sugar substitute (Splenda) (optional)
1 egg
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease a large baking sheet.
  • In a mixing bowl, combine the peanut butter, 1 cup of Splenda, the egg, and vanilla. Stir well with a spoon.
  • Roll the dough into balls the size of walnuts. Place the balls on the prepared cookie sheet.
  • With a fork dipped in optional 1/3 cup of Splenda to prevent sticking, press a criss-cross design on each cookie.
  • Bake for 12 minutes, remove from the oven, and sprinkle the cookies with the optional 1/3 cup of Splenda.
  • Cool slightly before removing from the pan.

Tips:

  • Use a sugar substitute: Since these cookies are diabetic-friendly, it's important to use a sugar substitute that won't raise blood sugar levels. Some popular options include erythritol, xylitol, and stevia.
  • Choose a creamy peanut butter: The type of peanut butter you use will have a big impact on the texture of your cookies. For the best results, use a creamy peanut butter that is made with 100% peanuts.
  • Don't overmix the dough: Overmixing the dough will make your cookies tough. Mix the ingredients just until they are combined.
  • Chill the dough before baking: Chilling the dough before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a low temperature: Baking the cookies at a low temperature will help them cook evenly without burning.
  • Let the cookies cool completely before storing them: The cookies will be very soft when they first come out of the oven, so it's important to let them cool completely before storing them. This will help them firm up and keep their shape.

Conclusion:

These magical diabetic peanut butter cookies are a delicious and satisfying treat that can be enjoyed by people with diabetes and those without. They are easy to make and can be customized to your liking. Whether you like your cookies chewy or crispy, these cookies are sure to please.
