MUMBO SAUCE - D.C.'S FAMOUS SWEET & SOUR SAUCE

Mumbo Sauce - D.C.'s Famous Sweet & Sour Sauce image

Apparently, this sweet-and-sour condiment came to Washington D.C. via Chicago, where it somehow became a staple in Chinese take-out restaurants served as a condiment with fried chicken wings, among other things. This is my version.

Number Of Ingredients 10

1 (6 ounce) can tomato paste
⅔ cup ketchup
⅔ cup white sugar
1 cup pineapple juice
1 cup distilled white vinegar
1 lemon, juiced

As soon as mixture starts to bubble, reduce heat to medium-low and simmer, whisking occasionally, until mixture has thickened slightly, about 10 minutes.
  • Remove pan from heat; allow to cool about 10 minutes or so. Pour sauce through a fine strainer to eliminate solids.

Categories     Chicken Breast

Time 35m

Yield 4 serving(s)

Number Of Ingredients 10

8 boneless skinless chicken thighs or 4 boneless skinless chicken breasts
4 garlic cloves, minced
2 tablespoons freshly grated ginger
1/4 cup tamari soy sauce or 1/4 cup soy sauce
1/4 cup freshly squeezed lime juice
2 mangoes, peeled, pitted, and cut into 1/4 inch cubes
3 tablespoons freshly squeezed lime juice
1 -2 jalapeno chile, seeds and membranes removed, minced
3 green onions, finely sliced
2/3 cup lightly packed fresh cilantro leaves, stems discarded, coarsely chopped

Steps:

  • Rinse the chicken thoroughly under cold running water.
  • Pat dry with a paper towel.
  • In an oven-proof baking dish combine the remaining ingredients.
  • Add the chicken and turn several times to mix the ingredients.
  • Cover with aluminum foil and marinate for 2 to 4 hours in refrigerator.
  • Combine all the salsa ingredients in a bowl and mix thoroughly with a fork.
  • Reserve.
  • Preheat oven to 375 degrees F.
  • Transfer covered baking dish to oven and bake for approximately 20 minutes, or until chicken is cooked throughout.
  • To serve, spoon a generous serving of salsa onto plate and top with 2 thighs (or 1 breast).
  • Enjoy!

Tips:

  • Choose a high-quality soy sauce. This is the foundation of the sauce, so make sure it's a good one.
  • Use fresh ginger and garlic. These ingredients add a lot of flavor to the sauce. If you don't have fresh ginger or garlic on hand, you can use ground ginger or garlic powder, but the flavor won't be as good.
  • Don't overcook the chicken. Chicken breasts are very thin, so they can easily be overcooked. Cook them over medium heat until they are cooked through but still juicy.
  • Serve the chicken with your favorite sides. Rice, noodles, or vegetables are all great options.

Conclusion:

Mambo chicken is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. The chicken is tender and flavorful, and the sauce is sweet, tangy, and a little bit spicy. Serve it with your favorite sides and enjoy!
