Garam Masala Seared Salmon with Coconut-Curry Butter image

Here's a new way to incorporate South Indian flavors. Try and get fresh wild king or Copper River salmon while they are in season. Fresh sockeye would also work, use whatever is the freshest available.

Categories     World Cuisine Recipes     Asian     Indian

Time 35m

Yield 8

Number Of Ingredients 10

¾ cup dry white wine
½ cup heavy cream
⅓ cup coconut milk
2 tablespoons curry powder
1 cup cold, unsalted butter, cut into pieces
kosher salt to taste
¼ cup vegetable oil
8 (6 ounce) fillets Alaskan king salmon
2 tablespoons garam masala
kosher salt to taste

Steps:

  • Pour white wine, cream, and coconut milk into a saucepan; season with curry powder. Bring to a light boil over medium-high heat, then reduce heat to medium-low, and simmer until the liquid has reduced to 1/2 cup, about 10 minutes.
  • When the liquid has reduced, turn heat to low, and whisk in the butter, a few cubes at a time, until all of the butter has incorporated. Do not allow the mixture to boil or else it will separate. When the butter has incorporated, season to taste with salt and set aside to keep warm.
  • Heat the oil in a saute pan over medium-high heat until it begins to smoke. While the oil is heating, lightly season both sides of the salmon with garam masala and salt.
  • Sear the salmon in the hot oil for 3 to 4 minutes on one side, then turn over, and continue cooking for 2 to 3 minutes until done. Briefly drain on paper towels to absorb excess oil, then serve immediately with the curry butter sauce.

BAKED SALMON WITH COCONUT-TOMATO SAUCE

Baked Salmon With Coconut-Tomato Sauce image

In 2008, The New York Times asked the chef Eric Ripert of the celebrated restaurant Le Bernardin to dream up a meal that leaned heavily on products from a Jack's 99-Cent Store. Mr. Ripert tackled the assignment with ingenuity and aplomb, creating dishes like this baked salmon with creamy jasmine rice and a tomato sauce, which uses canned coconut milk in both the rice and sauce.

Time 45m

Yield 4 servings

Number Of Ingredients 14

1 1/2 teaspoons canola oil
1 tablespoon finely diced garlic
2 tablespoons finely diced onion
1/2 cup canned tomato sauce
1/2 cup coconut milk
Salt and ground black pepper
2 tablespoons butter
1 cup jasmine rice
1/2 cup whole milk
1/2 cup coconut milk
Salt and ground white pepper
2 tablespoons butter
4 (6-ounce) salmon fillets
Salt and ground black pepper

Steps:

  • Make the coconut-tomato sauce: In a saucepan, heat oil and add garlic and onion. Sauté until soft, about 3 minutes. Add tomato sauce, coconut milk and salt and pepper to taste. Bring to a boil, then reduce heat to low. Simmer until slightly reduced, about 10 minutes. Remove from heat and keep warm.
  • Make the creamy jasmine rice: In a medium saucepan, combine 1 1/2 cups water and the butter. Bring to a boil, add rice, and reduce heat to low. Simmer uncovered for 12 minutes. Remove pan from heat, cover snugly with foil, and allow to sit for another 12 minutes.

  • Make the salmon: Preheat oven to 400 degrees. Place butter in roasting pan large enough to fit salmon fillets, and add 1/4 inch water. Place over medium heat to bring to a boil, then add salmon and cover pan snugly with foil. Place in oven and cook as desired, about 5 minutes for medium-rare. Remove fish from pan and drain on paper towels.

Tips:

  • Choosing Fresh Salmon: Select Salmon that is firm and has a vibrant pink color. Ensure that it smells fresh, without any strong fishy odor.
  • Preparing Salmon: Rinse the Salmon fillets thoroughly under cold water and gently pat them dry with a paper towel. Salmon skin can be removed if desired, but leaving it on adds flavor and prevents the fish from drying out during the cooking process.
  • Spices and Seasonings: The use of a flavorful blend of spices and seasonings is key to enhancing the taste of the dish. Coriander, cumin, turmeric, red chili powder, and garam masala are essential spices for this Mangalore-style Salmon preparation.
  • Coconut Milk: Use high-quality coconut milk for the best results. Full-fat coconut milk adds creaminess and a rich coconut flavor to the dish.
  • Cooking Technique: Braising is a gentle cooking method that involves simmering in a flavorful liquid. Use a heavy-bottomed pan or pot to ensure even heat distribution. Maintain a medium-low heat level to prevent the coconut milk from curdling or scorching.
  • Fresh Herbs: Garnish the Salmon with fresh herbs like cilantro, and mint leaves to add a vibrant freshness and aroma to the dish.

Conclusion:

Mangalore Salmon Braised with Coconut Milk is a delicious and flavorful dish that combines aromatic spices, creamy coconut milk, and tender Salmon fillets.
