1 cup all-purpose flour
¼ cup confectioners' sugar
½ cup butter
1 cup packed brown sugar
⅓ cup all-purpose flour
2 eggs, beaten

½ teaspoon baking powder
¼ teaspoon lemon extract
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x9 inch baking pan with wax paper.

4 large Ripe mango cut in slices
1/2 cup Minute tapioca
1/4 cup Sugar
1 juice lemon

Pinch salt
1 stick (8 tablespoons) unsalted butter, at room temperature
Two 15-ounce cans diced mango, syrup drained
1 1/2 cups granulated sugar
5 large eggs
1 teaspoon lemon zest plus 1/3 cup lemon juice
1/2 cup all-purpose flour
Powdered sugar, for dusting
1 cup toasted coconut

  • For the crust: Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with parchment paper and grease with vegetable oil.
