MARINADE FOR CHICKEN ON THE GRILL FROM SAVANNAH

Marinade for Chicken on the Grill from Savannah image

This marinade is enough for 12 pieces of chicken. Recipe is taken from "Savannah Style" a cookbook published by the Jr. League there in 1980. You marinate the chicken pieces, then cook them in a pan on the grill, turning frequently, then remove from pan and place chicken pieces directly on grill for about 10 minutes. Original recipe used in addition 2 1/2 tsp salt, but I think this would be salty enough from the soy sauce, Cooking time is marinating time.

EASY GRILLED CHICKEN WITH CITRUS MARINADE

Easy Grilled Chicken With Citrus Marinade image

This easy grilled chicken recipe is a fast track to dinner. This grilled chicken breast is never dry, thanks to a marinade that's sourced from the pantry.

Provided by Kendra Vaculin

Yield 4 servings

Number Of Ingredients 10

2 large shallots, finely chopped
4 garlic cloves, finely grated
⅔ cup extra-virgin olive oil, plus more for grill
¼ cup sherry vinegar or red wine vinegar
3 Tbsp. fresh lemon juice
2 Tbsp. fresh lime juice
1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt
1 tsp. sugar
½ tsp. freshly ground black pepper
4 skinless, boneless chicken breasts (about 1½ lb.)

Steps:

  • Whisk 2 large shallots, finely chopped, 4 garlic cloves, finely grated, ⅔ cup extra-virgin olive oil, ¼ cup sherry vinegar or red wine vinegar, 3 Tbsp. fresh lemon juice, 2 Tbsp. fresh lime juice, 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt, 1 tsp. sugar, and ½ tsp. freshly ground black pepper in a medium bowl to combine. Set ⅓ cup marinade aside.
  • Arrange 4 skinless, boneless chicken breasts (about 1½ lb.) in a single layer in a baking dish. Pour remaining marinade over chicken and turn to coat. Cover dish and chill, turning chicken halfway through, at least 30 minutes and up to 4 hours.
  • Prepare a grill for medium-high heat; oil grate. Remove chicken from marinade, letting excess drip back into dish; discard marinade in dish. Grill chicken, turning halfway through, until cooked through and blackened grill marks appear, 10-14 minutes. Transfer to a cutting board and let rest 5-10 minutes before slicing.
  • Serve chicken with reserved marinade spooned over.

Tips:

  • Choose the right chicken: Bone-in, skin-on chicken pieces are best for grilling because they stay moist and flavorful. If you're using boneless, skinless chicken breasts, be sure to pound them thin so they cook evenly.
  • Use a flavorful marinade: The marinade is what gives grilled chicken its delicious flavor. Be sure to use a marinade that contains acidic ingredients, such as lemon juice, vinegar, or yogurt, to help tenderize the chicken. You can also add herbs, spices, and other flavorings to the marinade.
  • Let the chicken marinate for at least 30 minutes, but no longer than 24 hours: Marinating the chicken for too long can make it tough. If you're short on time, you can marinate the chicken for as little as 30 minutes, but for best results, marinate it for at least 2 hours.
  • Preheat your grill to medium-high heat: This will help to sear the chicken and prevent it from sticking to the grill grates.
  • Grill the chicken for 8-10 minutes per side, or until cooked through: Be sure to flip the chicken halfway through cooking so that it cooks evenly. You can check if the chicken is cooked through by inserting an instant-read thermometer into the thickest part of the chicken. The chicken is cooked through when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest for 5 minutes before serving: This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Grilled chicken is a delicious and versatile dish that can be enjoyed in many different ways. By following these tips, you can make sure that your grilled chicken is always moist, flavorful, and cooked to perfection.
