1 medium onions, sliced
3 medium tomatoes, cut into wedges
1/2 c vinegar
1/4 c sugar
1 c water
2 tsp salt
1 tsp pepper

  • 1. Toss together peeled and sliced cucumbers, tomatoes, and onions in a large bowl.

Onions and peppers are a classic accompaniment to grilled steaks, their pungency and sweetness acting as a perfect foil for the richness of the meat. Trouble is, the vegetables often are sauteed in copious amounts of butter or oil. When you pair them with steak, even relatively lean venison, any hopes of a healthy meal go out the window. I address this by cooking the roasted peppers and onions lightly in a small amount of oil in a saute pan set directly on the grill. Venison loin steak is a treat worth having, particularly if you serve it with these simply prepared onions and peppers. If you prefer, serve beef tenderloin steaks instead.

1/2 cup molasses
1/2 cup balsamic vinegar
1/2 cup Roasted Garlic Cloves, recipe follows
1 branch fresh rosemary
1/2 small Thai chile, thinly sliced or 1 teaspoon red pepper flakes
1 teaspoon freshly cracked pepper
6 (1-pound) venison loin steaks, bone in
6 bell peppers, red and yellow
Salt and freshly ground black pepper
3 tablespoons grapeseed oil
1 large Vidalia or other sweet onion, cut into 1/4-inch-thick slices
Unpeeled garlic cloves, as needed

Steps:

  • In a small, heavy saucepan, combine all the marinade ingredients and bring to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally. Remove from the heat. Set aside and let cool to room temperature.
  • Lay each steak flat on the counter and tie each one horizontally so that the meat forms a tight, round package. You will need 6 pieces of kitchen twine, each measuring about 18 inches long.
  • Spread half the marinade over the bottom of a nonreactive casserole or deep baking pan just large enough to hold all 6 steaks snugly but without crowding. Arrange the steaks in the pan and coat with the remaining marinade. Cover and refrigerate for at least 3 hours or up to 5 hours.
  • Remove the steaks from the marinade and place them on a double thickness of paper towels to dry.
  • Light a fire in a charcoal grill or preheat a gas grill to medium.
  • Set the peppers over the hottest part of the grill and cook until they begin to char. Turn with tongs and continue grilling until the peppers are charred on all sides. Stand by the grill during this time, the peppers cook quickly. Using tongs to turn them prevents them from splitting open. Transfer immediately to a container just large enough to hold them. Cover tightly with plastic wrap and let the peppers cool to the touch. Rub the charred skin off the peppers. Remove the seeds and ribs from the peppers. Cut the peppers into strips.
  • About 15 minutes before grilling, remove the steaks from the refrigerator and let sit at room temperature. Season the steaks with salt and pepper and brush with half the oil. Grill for 7 minutes on 1 side. Turn and grill for 7 minutes longer on the other side. Turn 1 more time and grill for about 2 minutes longer for rare steak. Grill for 1 to 2 minutes longer for medium-rare. Take care when turning the steaks to that the grill marks on the meat are perpendicular to the grate.
  • Transfer the steaks to a warmer platter and remove the twine.
  • Place a medium saute pan or skillet on the hottest part of the grill. Put the remaining 1 1/2 tablespoons oil and the sliced onions in the pan and cook, stirring, for about 5 minutes, or until the onions are lightly browned. Add the pepper strips and cook for about 2 minutes, or until heated through.
  • Serve the steaks on warmed large plates with the grill marks showing. Carefully spoon the pepper and onions over half of each steak so that the grill marks are clearly visible.
  • Put the cloves in a dry cast iron skillet and cook over low heat for 20 to 30 minutes, or until softened. Turn frequently so that the cloves soften but do not brown. Slide the cloves from the skillet onto a plate to cool to the touch. Squeeze the softened garlic pulp from the individual cloves.

Steps:

  • Marinate steak and prepare onions:
  • Stir together garlic, 3 tablespoons vinegar, 1 1/2 tablespoons oil, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper and pour into a 1-quart sealable plastic bag.
  • Add steak to marinade, turning to coat, and marinate, chilled, turning bag occasionally, at least 4 hours.
  • Bring to room temperature, then remove steak from marinade and discard marinade.
  • Trim root ends of onions slightly, leaving them intact, then halve lengthwise and cut halves lengthwise into 3/4-inch-thick wedges. Insert 1 wooden pick horizontally through each wedge (to keep it intact while grilling). Light a large chimney starter of charcoal (80 to 100 briquettes) and pour lit charcoal onto bottom rack, leaving about one quarter of bottom rack free of charcoal and banking remaining coals across rest of bottom rack so that coals are about 3 times higher on opposite side. Charcoal fire is medium-hot when you can hold your hand 5 inches above thickest layer of coals for 3 to 4 seconds. 3Sear steak on lightly oiled grill rack over thickest layer of coals, uncovered, 1 minute on each side, then move steak to area over fewer coals and grill, uncovered, turning occasionally and moving to coolest area of grill if browning too quickly, until thermometer inserted horizontally 2 inches into meat registers 120°F, 10 to 12 minutes. Transfer to a plate and let stand 10 minutes (steak will continue to cook, reaching medium-rare).
  • To cook steak using a gas grill:
  • Preheat all burners on high, covered, 10 minutes.
  • Sear steak on lightly oiled grill rack, uncovered, 1 minute on each side, then reduce heat to moderate. Grill steak, covered, turning occasionally, until thermometer inserted horizontally 2 inches into meat registers 120°F, 10 to 12 minutes. 1/4 cup olive oil
2 to 3 tablespoons Dijon mustard

Leaves from a few sprigs fresh thyme
3 tablespoons vegetable oil
2 medium red onions, thinly sliced
1 tablespoon honey
1 tablespoon balsamic vinegar

Steps:

  • Chops: Toss the chops with remaining ingredients and let marinate 1 hour or up to overnight covered in the refrigerated. Bring to room temperature before cooking.
  • Onions: Heat a large 2 burner griddle pan over medium heat for 5 minutes until smoking hot. Cook pork until nicely browned on both sides, about 5 to 6 minutes on each side. While the chops are finishing, heat the vegetable oil over medium-high heat in a large, skillet. Add onions and cook for about 4 minutes. Then drizzle onions with honey and balsamic and cook until softened and lightly caramelized, about 15 minutes. Season with salt and pepper.
  • Serve chops with little heap of onions.

3 onions (sliced) (i used the big texas sweet onions, since they were big i only used 2)
2 c water
1 c sugar
1/2 c vinegar ( i used white)
Tbsp mayonnaise (enough to make creamy)
1 tsp celery seeds

  • 1. Slice the onions into rings.( something like between 1/4 to 1/2 inch thick).Put in a sealable bowl.
  • 2. Boil the water, sugar, & vinegar.
  • 3. Pour over onion rings. Put on the lid.

  • 5. The next day, DRAIN OFF liquid. Mix several Tablespoons of mayonnaise & the celery seeds. Add salt to taste.

  • Arrange the chicken, pricked in several places with a fork, in one layer in the dish, let it marinate, covered and chilled, turning it once, for at least 3 hours or, preferably, overnight. and drain it, reserving 1/2 cup of the marinade and discarding the rest.
  • In a shallow dish whisk together the egg and the reserved marinade. In another shallow dish stir together the flour, the salt, the thyme, and pepper to taste. Dip the chicken in the egg mixture, letting the excess drip off, and dredge it twice in the flour mixture to make a thick coating, shaking off the excess each time. Reserve the remaining flour mixture. Let the chicken stand in one layer on a wire rack for 15 minutes.
  • In a large skillet, preferably cast-iron, heat 1 inch of the oil to 375°F. and in it fry half the chicken for 1 minute on each side. Reduce the heat to moderate so that the temperature of the oil is reduced to 300°F., fry the chicken, uncovered, for 20 to 25 minutes, or until it is cooked through, and transfer it with tongs to paper towels to drain. Keep the chicken warm while frying the remaining chicken in the same manner. Dredge the onions in the reserved flour mixture, shaking off the excess, and in the skillet fry them in 375°F. oil, turning them carefully, for 5 minutes, or until they are lightly golden. Transfer the onions with a slotted spoon to paper towels to drain and sprinkle them with salt to taste. Mound the onions in the middle of a large platter and arrange the chicken around them.

DH and I made these tasty lamb burgers from the Grilling 2010 magazine a couple of nights ago. The recipe is credited to Tony Rosenfeld of "Big Guy Cooking." I really liked these burgers. DH liked them, but likes my Moroccan Lamb Burgers (also posted) better. The fresh dill in my garden wasn't looking so hot, so I subbed 1 Tb dried dill. This worked, but I'm sure the fresh would be even better. I would definitely make these again. Prep time includes 15 mins marinating time.

1 1/4 lbs ground lamb
2 teaspoons sweet paprika
2 teaspoons dried oregano
1 small garlic clove, minced, smashed to a paste
kosher salt, to taste
6 ounces feta, cut into 1/4-inch thick slices (about 8)
2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh dill
1/2 small red onion, thinly sliced
3 tablespoons red wine vinegar
1 teaspoon granulated sugar
4 whole wheat pita bread, warmed
1 tomatoes, 4 thin slices
1 English cucumber, 8 thin slices

Steps:

  • Prepare a medium charcoal or gas grill fire. Clean and oil the grill grates. Gently mix the lamb with the paprika, oregano, garlic, and 1 tsp salt. Shape it into four 1/2 inch thick patties.
  • On a large plate, lay out the slices of feta and sprinkle with the olive oil and 1 Tb of the dill.
  • In a small bowl, toss the onion with the vinegar, sugar, 1/2 tsp salt, and the remaining 1 Tb dill, and let sit at room temperature for 10 to 15 minutes.
  • Grill the burgers on one side until they have good grill marks, about 5 minutes. Flip and cook the other side until it has good grill marks, too, and the burgers are just light pink inside (make a nick with a paring knife), about 5 minutes for medium doneness.
  • Serve the burgers in the warmed pita with the feta, tomato, cucumber, and a heaping 1 tsp of pickled onions.

1 1/2 pounds pork tenderloin, cut into 16 equal pieces
1 red onion, cut into 16 equal pieces
8 8- to 10-inch bamboo skewers
1/3 cup vegetable oil
1/4 cup dry red wine
3 tablespoons red wine vinegar
3 tablespoons soy sauce
1 tablespoon chopped garlic
1 tablespoon chopped peeled fresh ginger
1 1/2 teaspoons sugar

Steps:

  • Thread two pieces of pork and 2 pieces of onion alternately on each skewer. Season with salt and pepper. Arrange kebabs in 13x9x2-inch glass baking dish.
  • Whisk all remaining ingredients in medium bowl. Pour marinade over kebabs. Let stand up to 2 hours at room temperature or cover and refrigerate up to 1 day, turning occasionally.
  • Preheat broiler. Drain marinade into small saucepan. Broil kebabs until pork is cooked through, turning frequently and basting occasionally with marinade, about 12 minutes.

½ cup balsamic vinegar
¼ cup extra-virgin olive oil
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard

¾ teaspoon freshly ground black pepper
DISH
1 flank steak, about 1½ pounds and ¾ inch thick
2 tablespoons extra-virgin olive oil
2 bell peppers, any color, cut into thin strips
1 large yellow onion, cut in half and thinly sliced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
4 ciabatta or other soft sandwich rolls, split
4 teaspoons Dijon mustard

Steps:

  • In a large, resealable plastic bag combine the marinade ingredients. Place the steak in the bag (cut the steak crosswise in half, if needed, to fit in the bag), press the air out of the bag, and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for at least 4 hours or overnight, turning occasionally. In a large skillet over medium-high heat, warm 2 tablespoons oil. Add the bell peppers, onion, salt, and pepper and cook until the vegetables begin to soften, 10 to 12 minutes, stirring occasionally. Reduce the heat to medium and cook until the vegetables are very tender and caramelized, 8 to 10 minutes more, stirring often. Remove from the heat and cover to keep warm. Prepare the grill for direct cooking over medium heat (350° to 450°F). Remove the steak from the bag and discard the marinade. Grill the steak over direct medium heat, with the lid closed, until cooked to your desired doneness, 8 to 12 minutes for medium rare, turning once. During the last 30 seconds to 1 minute of grilling time, toast the rolls, cut side down, over direct heat. Remove from the grill and let the steak rest for 3 to 5 minutes. Cut the steak across the grain into thin slices. Spread 1 teaspoon mustard on the bottom half of each split roll. Build the sandwiches with the meat and the pepper-onion mixture. Serve warm.

Steps:

  • Preheat oven to 450°F. Line a large rimmed baking sheet with foil. Combine 1/4 cup cilantro, lime juice, garlic, 3 teaspoons cumin, and 1/2 teaspoon paprika in a small bowl. Season with salt and pepper. Pour 1/2 cup of marinade into a resealable plastic bag. Add tofu. Seal bag; shake to coat. Let marinate at room temperature, turning occasionally, for 10-15 minutes.
  • Meanwhile, transfer remaining marinade to a blender. Add 1/4 cup cilantro, 2 tablespoons oil, and honey; purée until smooth. Season sauce with salt and pepper.
  • Combine onion and peppers in a large bowl. Toss with remaining 2 tablespoons oil, 1/2 teaspoon cumin, and 1/4 teaspoon paprika. Season with salt and pepper.
  • Drain tofu. Season both sides with salt and pepper and place in a single layer on one side of prepared sheet. Spread vegetables in a single layer opposite tofu.
  • Roast, stirring vegetables occasionally, until vegetables are tender and tofu is lightly browned, 20-25 minutes.
  • Divide among plates. Drizzle with sauce. Garnish with remaining 1/4 cup cilantro.

  • Drain chops and discard marinade.
  • Cook on a lightly oiled BBQ for 2-3 Min's per side or until cooked to your liking.
  • Serve lamb with onions.
