4 tablespoons sunflower oil
12 chicken pieces (thighs and drumsticks)
2 onions (roughly chopped)
500 g butternut squash (peeled, deseeded, and cut into 5cm cubes)
2 aubergines (cut into 4cm cubes)
2 -3 large potatoes (waxy variety peeled and cut into 4cm cubes)
400 ml coconut milk
1 tablespoon tamarind paste
3 bay leaves
1 large papaya (ripe, peeled and sliced)
1 large mango (ripe, peeled and chopped into 5cm cubes)
1/2 lime (juiced)
1 1/2 tablespoons rum
1/4 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon mustard seeds
1/2-1 hot red chili

Steps:

  • Pound all spices into a paste using a pestle and mortar adding 1 teaspoon of sea salt.
  • Heat half the oil in flameproof casserole dish or saucepan and season the chicken brown all over in the oil. Remove and set aside. Cook the onions, squash, aubergine and potato in remaining oil. When all veg begins to soften stir and brown add spice mix and cook, stirring for 4 mins to release fragrance of the spices.
  • Return chicken to the casserole and add remaining ingredients except the papaya, mango, lime and rum. Bring to boil, reduce heat cover and simmer until chicken is tender and cooked about 40 mins.
  • Add papaya, mango, rum and lime 5 mins before serving. Stir cover and cook until fruit is heated through season to taste with salt and pepper.

3 cloves garlic, chopped
1 tablespoon rum
2 tablespoons vegetable oil
1 onion, chopped
1 tablespoon sliced lemongrass
1/2 cup coconut milk
1 tablespoon curry powder
2 teaspoons sesame oil
1 hot pepper, chopped, optional
Freshly chopped cilantro leaves, for garnish

Steps:

  • In shallow baking dish or bowl, combine chicken with garlic and rum and let marinate, covered, in the refrigerator for a few hours or overnight.
  • In a medium-sized casserole or heavy pot, heat the oil over medium-high heat. Add the onions and lemongrass and saute until tender and fragrant, about 3 minutes, stirring occasionally. Add the chicken and saute until cooked through, about 4 to 5 minutes. Add coconut milk, curry powder, and sesame oil and heat through. Add hot pepper, if using. 3 tablespoons peanut oil
1 whole chicken (Cut in typical quarters or use breasts as desired)
2 onions (Finely chopped)
2 garlic cloves (Crushed)
1 red chili pepper (Fresh & finely chopped)
2 cups coconut milk
saffron strand (a few)
salt (To taste)
pepper (To taste)
2 tablespoons parsley (Freshly chopped)

Steps:

  • Heat peanut oil in a lrg deep skillet & add chicken quarters (or breasts). Fry gently over moderate heat till all chicken surfaces are golden brown, turning occ in the oil. Remove chicken & set aside.
  • Add onions, garlic & chile to the skillet & fry gently till soft (about 5 minutes). Do not allow onion to brown ~ it should be only lightly colored.
  • Return chicken to the skillet & pour in the coconut milk. Sprinkle w/saffron & season w/salt & pepper. Stir well & simmer gently for 30-40 min till the chicken is cooked + tender & the sauce has thickened & somewhat reduced.
