¼ cup bread crumbs
1 teaspoon baking powder
1 teaspoon dried parsley
1 teaspoon mustard powder
⅛ teaspoon black pepper
2 teaspoons seafood seasoning, such as Old Bay™

2 tablespoons butter, melted
1 teaspoon Worcestershire sauce
¾ cup cholesterol-free egg product
1 pound lump crab meat

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Combine bread crumbs, baking powder, parsley, mustard powder, pepper, and seafood seasoning; set aside. Stir together mayonnaise, butter, Worcestershire, and egg product until smooth. Fold in crab meat, then fold in bread crumb mixture until well blended.
  • Shape mixture into 12 crab cakes, about 3/4 inch thick, and place onto prepared baking sheet.

3 stalks green onion, minced
1 large egg
1 medium lemon, juiced
1 small jalapeno pepper, seeded and finely chopped
2 ½ tablespoons panko bread crumbs
2 teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon hot pepper sauce (such as Tabasco®)
1 teaspoon Worcestershire sauce
½ teaspoon ground ginger
½ teaspoon Dijon mustard
⅔ cup creamy salad dressing (such as Miracle Whip®)
3 tablespoons horseradish sauce
2 tablespoons ketchup

1 pound lump crabmeat, picked over for cartilage
1 large egg
2 1/2 tablespoons Homemade Mayonnaise, or prepared
2 teaspoons freshly squeezed lemon juice
1 1/2 teaspoons Worcestershire sauce
Dash hot sauce, such as Tabasco
Coarse salt and freshly ground pepper
3 tablespoons peanut oil
Horseradish Tartar Sauce

Steps:

  • In a large bowl, gently mix together cracker crumbs, crabmeat, egg, mayonnaise, lemon juice, Worcestershire sauce, hot sauce, salt, and pepper. The mixture will be wet. Form about 1/4 of the crab mixture for each cake.

  • 5.Gently flatten the ball of crab mixture and round the edges. Form cakes about one-half inch thick and three inches round. Refrigerate.
  • 6.In a sauté pan, melt 2 tablespoons of oil until hot. Gently slide in crab cakes 2 at a time.
  • 7.Brown on one side approximately two-to-three minutes. Turn and brown on the other side. Turn down heat to simmer and cook crab cakes another 5-8 minutes.
  • Chef's Tip:.
  • While you may be tempted to increase the amount of bread crumbs used, you'll receive the best sauté results with the thin layer as described above.

1 small minced onion, lightly sauteed
1/2 cup crushed saltine crackers
1 egg

salt and pepper
olive oil or vegetable oil (for frying)

Steps:

  • In a large bowl, mix crabmeat, onion, crushed crackers, eggs, mayonnaise and seasonings.
  • Gently mix everything together and shape into crab cakes.
  • Saute cakes in a little oil for about five minutes on each side or until golden brown.
  • To prepare aioli, place egg yolks, garlic and basil in a blender.
  • Start the blender and slowly add oil.
  • When thoroughly mixed and creamy, add salt and lemon juice and if you want it hot and spicy the option red pepper or cayenne.

Steps:

  • Put crab meat in a large bowl and cover with bread crumbs and moisten with milk.
  • Combine beaten egg with the mayonnaise in a separate bowl. Add baking powder, parsley, onion, salt, and pepper.
  • Pour this mixture over crab/crumb/milk mixture. Refrigerate for at least 1 hour. Dust cakes lightly with flour.
  • After one hour, form crab into cakes, not over mixing or over forming. Put each crab cake on wax-paper - (putting wax paper on top too) and let sit until ready to fry up. Let sit again, at least one hour, this makes the cake easier to hold together during the cooking process.

  • Heat butter or oil until hot. (Shimmering) Fry crab cakes approximately 4 minutes per side, carefully, flipping over and frying for another 4-5 minutes until browned.
  • Drain on paper towel and serve.

1 pound crabmeat
2 slices white bread, crusts trimmed
1 egg, beaten
1 tablespoon mayonnaise
1 teaspoon Dijon-style prepared mustard
1 teaspoon Worcestershire sauce
1 tablespoon Old Bay Seasoning TM
2 tablespoons butter

Steps:

  • Pick the crab meat to remove any remaining pieces of shell.
  • Pick bread into small pieces and place in medium-size bowl with crabmeat. Add egg, mayonnaise, mustard, Worcestershire sauce, and Old Bay seasoning ™. Mix ingredients by hand to avoid overworking the crabmeat, you want to keep the lumps of meat as much as possible. Form into patties; this should make 6 good-size cakes.
  • Heat 2 tablespoons of butter in a skillet, then fry cakes for about 4 minutes each side or until brown crust forms on both sides of the crab cake.

2 tablespoons canola oil (or vegetable oil)
2 scallions, trimmed, thinly sliced
1 celery rib, inner rib, trimmed, diced fine
1/2 red bell pepper, seeded, diced fine
1 extra large egg
1 teaspoon Old Bay Seasoning
1 tablespoon light mayonnaise
1/2 teaspoon Dijon mustard (or Verjus mustard)
1 tablespoon flat leaf parsley, chopped
kosher salt
fresh ground pepper
1 lb lump crabmeat, picked over
2 tablespoons plain breadcrumbs, plus extra for coating the cakes
2 -3 tablespoons Crisco shortening
3 tablespoons sun-dried tomatoes packed in oil, pureed
1/2 cup light mayonnaise

Steps:

  • For the crab cakes: Heat oil in large skillet and add the scallions, celery and red pepper dice. Saute for 4-5 minutes until vegetables are barely tender.
  • Remove from heat, transfer to a plate and let cool.
  • In a mixing bowl, beat the egg and whisk in the Old Bay, mayonnaise, mustard, salt, pepper and parsley.
  • Add the cooled vegetable mixture and stir to mix.
  • Add crab meat and 2 tablespoons breadcrumbs and stir gently to mix, be careful not to break up the crab meat.
  • Scoop about one-half cup of the mixture for each cake and shape them. Use extra crumbs to coat the outside if cakes are too moist.
  • Arrange on a plate, cover with plastic wrap and refrigerate for 15-20 minutes.
  • When ready to cook, melt shortening in a skillet over medium heat. Put crab cakes in 3-4 at a time and saute until golden brown, no longer than 3 minutes per side.
  • To make the aioli simply add the sun-dried tomatoes and the mayonnaise together and stir well to mix.
  • Taste for additional seasoning (salt and pepper) and refrigerate until ready to serve.

1 lb backfin crab meat (Maryland Blue) or 1 lb lump crabmeat (Maryland Blue)
4 tablespoons Hellmann's mayonnaise
1 teaspoon yellow mustard (French's)
2 tablespoons Worcestershire sauce
1/4 cup fresh ground black pepper (see note)
2 teaspoons salt (to taste)
1 teaspoon baking powder
saltine crackers (1-2 packs, crushed with rolling pin)
1 extra large egg, beaten well
1/2 cup fresh parsley, Minced

  • gently place crab cakes in frying temperature oil and brown evenly on both sides. Be careful that your oil is not to hot and should not be smoking.
  • Crab Cakes are ready when brown on both sides usuallly a few minutes per side. DO NOT overcook. Drain on paper towels, and serve immediately.
