MIXED-GRAIN STUFFING

Mixed-Grain Stuffing image

Who says stuffing has to be bread-based? Here, wheatberries and millet are dressed up with two types of mushrooms, Middle Eastern spices, and for a pop of sweetness, golden raisins. It's used both to fill Roasted Acorn Squash for a hearty vegetarian main dish and to accompany Roasted Turkey Rubbed with Coriander, Black Pepper, and Fennel.

Time 1h40m

Yield Makes 8 cups

Number Of Ingredients 16

1 1/2 cups wheatberries or spelt (10 ounces)
1/3 cup extra-virgin olive oil
1 medium yellow onion, minced (1 1/2 cups)
4 cloves garlic, minced (2 tablespoons)
Kosher salt and freshly ground pepper
1 1/4 teaspoons ground cumin
1 teaspoon ground coriander
10 ounces cremini or white button mushrooms, coarsely chopped (3 cups)
7 ounces shiitake mushrooms, stemmed and coarsely chopped (3 1/2 cups)
2 cups vegetable broth
Pinch of saffron
3/4 cup millet
1 cup golden raisins, coarsely chopped
1 teaspoon finely grated lemon zest, plus 2 tablespoons fresh juice
1/2 teaspoon finely grated orange zest (preferably blood orange), plus 2 tablespoons fresh juice
1 cup packed coarsely chopped flat-leaf parsley leaves

Steps:

  • Soak wheatberries in cold water overnight in the refrigerator (or place in a pot, cover with water by 1 inch, and bring to a boil; then remove from heat and let stand 1 hour). Drain; set aside.
  • Heat oil in a large straight-sided skillet over high. Add onion, garlic, 2 teaspoons salt, and 1/2 teaspoon pepper and cook, stirring occasionally, until onion is translucent and golden around the edges, 5 to 6 minutes. Add cumin and coriander and cook until fragrant, about 30 seconds. Add mushrooms and cook, stirring, until liquid evaporates and mushrooms begin to brown, 7 to 9 minutes. Add wheatberries; toss to coat.
  • Add broth, 1 cup water, and saffron; bring to a boil. Cover, reduce heat, and simmer until wheatberries are tender but retain some bite, about 1 hour. Stir in millet (if pan seems dry, add 1/2 cup water) and cook, covered, until grains are tender, 30 to 40 minutes. Remove from heat. Stir in raisins, lemon and orange zests and juices, and parsley; season with salt and pepper. Stuffing can be made ahead and refrigerated in an airtight container up to 3 days.

2 tablespoons pesto, homemade or store bought

MEDITERRANEAN INSPIRED STUFFED AND ROLLED FLANK STEAK

Mediterranean Inspired Stuffed and Rolled Flank Steak image

I saw a leg of lamb prepared this way on TV and thought it would be terrific for a flank steak. This steak is stuffed with garlic confit and sun-dried tomatoes, rolled, then pan seared before roasting in the oven. I used Recipe #419210.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 19

1/2 cup sun-dried tomato, coarse chopped
5 kalamata olives, pitted and coarse chopped
1 teaspoon fresh rosemary or 1/2 teaspoon dried rosemary, minced
1/4-1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 teaspoon Dijon mustard
5 garlic cloves, confit or 1 tablespoon garlic, crushed
1 tablespoon extra-virgin olive oil
1/2 tablespoon red wine vinegar
1/2 teaspoon cracked black pepper
1 -1 1/2 lb flank steak
salt & freshly ground black pepper
olive oil
1/2 cup water
1 teaspoon Dijon mustard
1 garlic cloves, confit crushed or 1 teaspoon garlic, crushed
1 teaspoon dried rosemary
1 teaspoon olive oil
2 teaspoons canola oil or 2 teaspoons vegetable oil

Steps:

  • Combine all the stuffing ingredients in a food processor and process until they form a smooth paste, about 45 to 60 seconds.
  • Prepare the flank steak by placing between plastic and pounding to a thickness of 1/3 inch; score on one side in a criss-cross pattern.
  • Turn steak over and season well with salt and pepper.
  • Smooth all but 1 tablespoon of the stuffing over the entire steak; reserved stuffing will be used later in a sauce.
  • Roll steak up and tie with kitchen twine in about 3 places.
  • Place the steak, uncovered, in the refrigerator for at least two hours up to overnight (you want the outside to dry a bit and the inside to marinate).
  • Preheat oven to 375 degrees F and bring the steak to room temperature.
  • Heat a large skillet over medium high heat; season steak on all sides generously with salt and pepper and sear well, in a little oil, on all sides.
  • Meanwhile combine reserved stuffing, water, mustard, garlic, rosemary, and oils in a roasting pan or baking dish; place a rack for the meat on top.
  • Place meat on rack, brush with pan juices, and roast to an internal temperature of 120 degrees F, about 15 minutes.
  • Let rest about 15 minutes, then slice into 1/4 inch slices; drizzle with pan sauce and more extra virgin olive oil if desired.

VENISON ROAST WITH MEDITERRANEAN STUFFING

Venison Roast With Mediterranean Stuffing image

One of the many delicacies our family enjoy when the bounty of the annual hunt becomes available. A recipe developed in our house over a number of seasons and now a firm family favourite. I usually cut a roast from the eye muscle in the loin of impala or kudu but any cut of meat suitable for roasting can be used. Preparation time does not include marinating.

TRADITIONAL RICE STUFFING

Traditional Rice Stuffing image

My mother passed this recipe on to her daughters as it was passed on to her from her mother. It is a delicious alternative to traditional bread stuffing, and my family always requests it when a chicken or turkey is on the menu. It will be a stunning addition to your Sunday night dinner table. As with any good recipe, adjust the seasonings to your taste. This recipe quantity is for an approximately 5-pound chicken.

ground black pepper to taste
2 tablespoons chicken bouillon, or more to taste
1 ½ cups long grain white rice

Tips:

  • Prep the Grains Ahead of Time: Cooking the grains in advance saves time and allows them to cool completely before adding them to the stuffing. You can cook the grains up to 3 days ahead and store them in an airtight container in the refrigerator.
  • Use a Variety of Grains: Don't limit yourself to just one type of grain. Experiment with different combinations, such as brown rice, quinoa, farro, and barley, to add texture and flavor to the stuffing.
  • Toast the Grains: Toasting the grains before cooking enhances their flavor and gives them a nutty aroma. Simply spread the grains in a single layer on a baking sheet and toast them in a preheated oven until they are golden brown.
  • Use Fresh Herbs: Fresh herbs, such as parsley, cilantro, and basil, add a burst of flavor to the stuffing. Chop them finely and add them to the stuffing just before serving.
  • Don't Overstuff the Bird: Overstuffing the bird can make it difficult to cook evenly and can lead to dry meat. Aim to fill the cavity loosely, leaving some room for the stuffing to expand during cooking.

Conclusion:

Mediterranean Grain Stuffing is a versatile and delicious dish that can be enjoyed as a side dish or as a main course. With its combination of grains, vegetables, herbs, and spices, it is a flavorful and satisfying dish that is sure to please everyone at your table. Experiment with different ingredients and flavors to create your own unique version of this classic recipe.
