After such a substantial meal, you'll want to keep things light for dessert. A little fancier than a fruit salad yet almost as easy, this cool combination of musky cantaloupe and honeydew gets an unexpected fillip from icy granita. Don’t worry if the granita melts faster than you expect-it will slump into a lovely sauce over the fruit.

1/2 cup fresh lime juice, divided
1 ripe cantaloupe
1 ripe honeydew
1/4 cup mint leaves

Time 2h30m

Yield 4-6 serving(s)

Number Of Ingredients 6

1/4 cup fresh lime juice
6 cups roughly chopped seedless watermelon (about 2 pounds)
1/2 cup sugar
1 lime, zested
2 inches ginger, divided, 1-inch cut into coins and 1-inch peeled and grated
fleur de sel, for garnish

Steps:

  • In a blender, blend the lime juice and watermelon together, creating watermelon water.
  • Strain the liquid through a fine mesh strainer to remove any seeds.
  • Place 1/2 cup of the watermelon water into a saucepan and add the sugar, lime zest and ginger coins. Bring the mixture to a simmer to dissolve the sugar and infuse the liquid with the ginger and lime flavor. Set aside to cool.
  • Add the grated ginger to the remaining watermelon water. Once the syrup is cool, remove the ginger coins and mix into the watermelon water. Pour the mixture into a 9 by 13-inch glass baking dish. Place the dish into the freezer to chill.
  • Every 30 minutes, scrape the mixture with a fork to break up the ice crystals and to keep it light and fluffy. Continue scraping every 30 minutes for at least 2 hours. Scrape the granita into elegant glasses and sprinkle with fleur de sel.
  • Cook's Notes:.
  • Taste your watermelon, this will tell you how much sugar to add to your simple syrup.
  • The fork helps to create ice crystals that will help give you a slushy consistency.

Yield Makes 8 servings

Number Of Ingredients 8

3/4 cup plus 2 tablespoons sugar
3/4 cup chopped fresh mint leaves
3/4 cup chopped fresh basil leaves
2 tablespoons grated lime peel
1 1/2 cups fresh lime juice
1 1/4 cups water
3 small melons, halved lengthwise, seeded, each half cut into 8 wedges (about 3/4 inch wide), peeled
2 tablespoons thinly sliced fresh mint leaves plus 8 fresh sprigs for garnish

Steps:

  • Mix sugar, chopped mint, basil, and lime peel in medium bowl. Mash with wooden spoon until herbs turn dark green, about 3 minutes. Stir in lime juice and 1 1/4 cups water. Let stand 1 hour. Strain into large bowl, pressing on solids. Transfer 1/2 cup lime syrup to small pitcher; cover and refrigerate. Pour remaining lime syrup into 13x9x2-inch metal baking dish. Place dish in freezer. Stir syrup with fork every hour until frozen, about 4 hours. (Can be made 1 day ahead. Cover and keep frozen.)
  • Divide melon wedges among 8 shallow soup bowls. Drizzle melon with reserved lime syrup. Scrape granita into flakes with fork. Spoon generous 1/2 cup granita atop melon in each bowl. Sprinkle with sliced mint leaves, garnish with mint sprigs, and serve.

Tips:

  • Choose ripe and flavorful melons: The quality of your melons will greatly impact the taste of your granita. Look for melons that are heavy for their size, have a deep color, and smell fragrant.
  • Use fresh basil: Fresh basil adds a bright, peppery flavor to the granita. If you don't have fresh basil, you can use dried basil, but it won't be as flavorful.
  • Add lime juice to taste: The amount of lime juice you add will depend on your personal preference. Start with a small amount and add more to taste.
  • Freeze the granita in a shallow pan: This will help it freeze evenly and quickly.
  • Stir the granita every 30 minutes or so: This will help prevent it from becoming too icy.
  • Serve the granita immediately: Granita is best enjoyed fresh. If you need to store it, place it in an airtight container in the freezer for up to 2 weeks.

Melon with basil lime granita is a refreshing and delicious summer treat. It's easy to make and can be enjoyed by people of all ages. Whether you're looking for a light dessert or a way to cool off on a hot day, this granita is sure to hit the spot. So next time you have a ripe melon on hand, give this recipe a try.
