BUTTERY MICROWAVE PEANUT BRITTLE
This is a great way to make peanut brittle. It is not too hard, and is more the texture of crackers. (Easier on the teeth!)

Steps:
- Butter large baking sheet. In microwave-proof bowl, combine peanuts, sugar, corn syrup and salt. Microwave on High until mixture bubbles vigorously, about 6 minutes. Remove mixture from microwave and stir in butter and vanilla. Return to microwave and cook on High until candy turns light gold color, about 3 minutes. Remove bowl from microwave. Working quickly, add baking soda to candy mixture and stir briskly (mixture will foam up). Immediately pour out onto prepared baking sheet. Shake baking sheet from side to side to spread brittle as thinly as possible. Let stand until cold and hard, about 2 hours. Break brittle into pieces. Store in airtight container at room temperature for up to 1 month.
Tips:
- Use a large microwave-safe bowl to make the peanut brittle. This will give the mixture plenty of room to expand.
- Be careful not to overcook the mixture. Overcooked peanut brittle will be hard and brittle.
- Stir the mixture every 2 minutes during cooking. This will help to prevent the mixture from scorching.
- If you want to make a larger batch of peanut brittle, you can double the recipe. Just be sure to use a larger bowl and cooking time.
- If you don't have a microwave, you can make peanut brittle on the stovetop. Just follow the recipe instructions, but cook the mixture over medium heat, stirring constantly, until it reaches the desired consistency.
Conclusion:
Peanut brittle is a delicious and easy-to-make treat. With just a few ingredients and a few minutes in the microwave, you can have a batch of peanut brittle that is perfect for snacking, gifting, or using as a topping for desserts. So next time you're looking for a sweet treat, give peanut brittle a try!
