Pastry for double-crust pie
18 saltines, halved
1-1/2 cups sugar
1-1/4 cups water
2 tablespoons lemon juice
1 teaspoon cream of tartar
1/2 to 1 teaspoon ground cinnamon
1/2 to 1 teaspoon ground nutmeg

Steps:

  • Place bottom pastry in a 9-in. pie plate. Layer crackers in shell; set aside. In a small saucepan, combine remaining ingredients; bring to a boil. Carefully pour over crackers (filling will be very thin). Cool for 10 minutes. Cut lattice strips from remaining pastry; place over filling. Seal and flute edges. 1 cup white sugar
2 teaspoons cream of tartar
30 buttery round crackers
½ teaspoon ground cinnamon
1 tablespoon lemon juice
1 recipe pastry for a 9 inch single crust pie
1 cup crushed buttery round crackers
½ cup packed brown sugar
½ teaspoon ground cinnamon
⅓ cup butter, melted

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).

2 tsp. cream of tartar
1-3/4 cups water
Zest and 2 Tbsp. juice from 1 lemon
1 pkg. (14.1 oz.) ready-to-use refrigerated pie crust (2 crusts)
36 round buttery cracker, coarsely broken (about 1-3/4 cups)
2 Tbsp. butter or margarine, cut into small pieces
1/2 tsp. ground cinnamon

Steps:

  • Mix sugar and cream of tartar in medium saucepan. Gradually stir in water. Bring to boil on high heat; simmer on low heat 5 min. or until mixture is reduced to 1-1/2 cups. Stir in zest and juice; cool 30 min.
  • Heat oven to 425°F. Roll out 1 crust on lightly floured surface to 11-inch circle; place in 9-inch pie plate. Place cracker crumbs in crust. Pour sugar syrup over crumbs; top with butter and cinnamon.

28 buttery round crackers

1 1/4 cups sugar
2 teaspoons cream of tartar
1 3/4 cups water
2 tablespoons fresh lemon juice (I used 1/2 teaspoon more)
2 1/2 cups roughly broken Ritz crackers (I used R.F.)
1 (9-inch) pastry pie crust, unbaked (I used frozen)
1 tablespoon salted butter
1/2 teaspoon apple pie spice, divided
1/2 cup all-purpose flour
1/3 cup light brown sugar, packed
Pinch of salt
1/8 to 1/4 teaspoon apple pie spice
3 tablespoons unsalted butter, melted

  • In a heavy, 2-quart saucepan, stir together the sugar and cream of tarter; slowly whisk in the water. Bring to a boil over medium-high heat; then reduce heat to medium/medium-low and simmer (slightly bubbling) for 15 minutes, stirring frequently.
