ROASTED ORANGE MOLASSES SWEET POTATOES

Roasted Orange Molasses Sweet Potatoes image

Categories     Citrus     Side     Bake     Easter     Vegetarian     Dinner     Orange     Root Vegetable     Sweet Potato/Yam     Gourmet     Fat Free     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 10 servings

Number Of Ingredients 7

Unsalted butter for buttering pan
1 teaspoon finely grated fresh orange zest
1 1/4 cups fresh orange juice
2 tablespoons molasses (not robust or blackstrap)
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large sweet potatoes (2 3/4 pounds), peeled and cut lengthwise into 1-inch-wide wedges

Steps:

  • Put oven rack in middle position and preheat oven to 450°F. Generously butter a large (13- by 9- by 2-inch) shallow baking pan.
  • Heat zest, juice, molasses, salt, and pepper in a small saucepan over moderate heat, stirring, until molasses is dissolved.
  • Toss potatoes with molasses mixture in baking pan and arrange, cut sides down, in 1 layer. Bake, uncovered, turning over once (to other cut side), until tender and glazed, 25 to 30 minutes.

Tips:

  • Choose the right potatoes: Select firm and evenly shaped sweet potatoes of similar size for even cooking.
  • Scrub and pierce the potatoes: Scrub the potatoes thoroughly to remove any dirt or debris. Then, use a fork to pierce the potatoes all over. This helps the steam escape during baking and prevents the potatoes from bursting.
  • Bake the potatoes at a high temperature: Preheat your oven to 425°F (220°C) to ensure the potatoes cook quickly and evenly. This will help caramelize the natural sugars in the potatoes, giving them a slightly crispy exterior and a tender, fluffy interior.
  • Make the molasses butter while the potatoes are baking: This allows the butter to soften and become easier to mix with the molasses. Simply combine the butter, molasses, and spices in a small bowl and stir until well blended.
  • Baste the potatoes with the molasses butter: Once the potatoes are cooked through, remove them from the oven and baste them with the molasses butter. This will add a delicious glaze to the potatoes and enhance their flavor.

Conclusion:

This recipe for molasses-glazed baked sweet potatoes is a simple yet flavorful dish that is perfect for any occasion. The combination of sweet and savory flavors, along with the crispy exterior and fluffy interior of the potatoes, makes this a dish that everyone will enjoy. Whether you are serving it as a side dish or a main course, these molasses-glazed sweet potatoes are sure to be a hit.
