A delicious and easy Mexican style stewed meat recipe that I got from my Mom. Sometimes I also add mushrooms and stewed tomatoes. Try serving over steamed rice, or in burritos!

2 pounds round steak, cut into bite size pieces
1 tablespoon garlic powder
1 teaspoon ground cumin
salt and pepper to taste
2 tablespoons olive oil
⅛ cup all-purpose flour
2 cups water
1 onion, sliced
1 green bell pepper, chopped

Steps:

  • Season the meat with the garlic powder, cumin and salt and pepper to taste. Heat the oil in a large skillet over medium high heat. Add the meat and saute for 5 to 10 minutes, or until browned on all sides.
  • Add the flour, stirring well, and saute for 1 more minute. Gradually add the water, making sure to crush any flour lumps. Then add the onion and green bell pepper, reduce heat to low and simmer for 15 to 20 minutes. Season with salt and pepper to taste.

1 can(s) (8oz) V8
2 teaspoon(s) black pepper
6 sprig(s) cilantro, fresh
1/8 cup(s) cumin powder (cumino)
2 tablespoon(s) garlic, minced
1/2 large green bell pepper, seeded, julianne+
2 pound(s) lean sirloin, cubed
2 tablespoon(s) masa harina*
2 tablespoon(s) salt
1 large stew pot (or crock pot)
1 large sweet yellow onion (1015 or Vidallia), rough chopped
2 large tomatoes, rough chopped
2 cup(s) water

Steps:

  • In Large Stew Pot, combine Water and Masa Harina over Medium heat. Stir until dissolved. USING A CROCK POT: Dissolve Masa Harina in the Water in a seperate stew pot or microwave safe dish, then pour into crock pot. Continue recipe.
  • Add Salt, Black Pepper, Cumin Powder, Garlic, V8. Stir to combine.
  • Reduce heat to Low.
  • Add Meat, Onion, Green Bell Pepper, Tomato, Cilantro.
  • Cover and ignore for 2-4 hours. USING A CROCK POT: Dish can be set to cook all day if you are a career mommy/daddy with a day job.
  • Turn off heat, let cool a few minutes before serving.
  • + Yellow Bell Pepper may be substituted for Green Bell Pepper if there is a sensative stomach coming to dinner. For added mildness, remove the inner membrane before adding to the dish.
  • * For thicker sauce, increase this amount. Be sure to taste and adjust the rest of the seasonings to avoid any corn taste coming through.

1 lb stewing beef
1 large onion, chopped
3 garlic cloves, chopped (more or less to taste)
4 cups low sodium beef broth (water can be substituted, adjust seasonings)
1 tablespoon chili powder
1 tablespoon comino
2 teaspoons salt
1 teaspoon black pepper
1/3 cup flour
1/3 cup vegetable oil
flour tortilla
fresh cilantro, stems removed
chopped onion
shredded cheddar cheese
sour cream

Steps:

  • Brown beef well in a large cast iron dutch oven, a heavy stainless steel pot can be used with good results.
  • Add onion and garlic and cook until onions are translucent.
  • Add stock, chili powder, comino, salt, and pepper.
  • Bring to a simmer and cook for 2-3 hours or until beef is very tender.
  • In a separate skillet mix flour and oil together to form a roux.
  • Cook over medium high heat until a dark beige color, about 5 minutes.
