1 ½ cups graham cracker crumbs
3 tablespoons white sugar
½ teaspoon ground cinnamon
¼ cup margarine
3 (8 ounce) packages cream cheese
1 ½ cups white sugar
4 eggs
2 teaspoons vanilla extract
¼ teaspoon salt
2 cups sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, 3 tablespoons sugar, cinnamon and melted margarine. Mix all ingredients well and press into bottom and sides of a 9 inch springform pan.
  • In a large bowl, beat cream cheese and sugar until smooth. Blend in the eggs one at a time, then stir in the vanilla and salt. Fold in the sour cream.

Her "trick" was using whipped cream cheese instead of regular, in defiance of the package instructions-which expressly say not to use whipped for cheesecake. 1 stick (8 tablespoons) unsalted butter
2 cups graham cracker crumbs (from about 18 whole crackers)
2 tablespoons plus 2 teaspoons sugar
Pinch fine salt
Three 11.5-ounce containers whipped cream cheese, at room temperature
1 1/4 cups sugar
One 16-ounce container sour cream, at room temperature
1 cup heavy cream
4 large eggs
1 teaspoon pure vanilla extract
Juice of 1/2 lemon
Grated zest of 1 lemon, optional

Steps:

  • Preheat the oven to 325 degrees F.
  • For the crust: Melt the butter in a covered microwave-safe medium bowl in the microwave. Brush a 10-inch springform pan with some of the butter. Stir together the remaining butter with the graham cracker crumbs, sugar and salt in a medium bowl. Press the crumb mixture into the bottom and 1 inch up the side of the pan, taking care to get the crust evenly into the edge. Bake until browned, 15 to 18 minutes. Let cool. Wrap the bottom of the pan and up the side with foil, and put the pan on a baking sheet.
  • For the filling: Beat the cream cheese and sugar in a large bowl with an electric mixer on medium speed for 1 minute. Add the sour cream, and mix until just combined. Add the heavy cream, and mix until just combined. Beat in the eggs one at time. Beat in the vanilla, lemon juice and lemon zest if using until just combined. (Do not overmix, or the cake will turn into a souffle!)
  • Pour the filling into the crust. Bake until the cake is slightly golden and barely set in the middle, about 1 hour 20 minutes. Turn off the oven, and leave the cake inside with the door shut for 1 hour. It will continue to set and color slightly in the oven.
  • Run a thin knife or spatula between the cake and the pan to prevent the cake from cracking as it chills. (Mom's cheesecake usually cracked, since she didn't do this.) Refrigerate overnight before serving.

2 Tbsp. butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup granulated sugar
2 Tbsp. flour
2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, broken into pieces, melted, cooled slightly
1 tsp. vanilla
4 eggs
1 Tbsp. sifted powdered sugar
1/3 cup mixed berries (blueberries and raspberries)

Steps:

  • Heat oven to 325°F.

1/2 cup margarine
1 1/4 cups flour, sifted
1 1/4 teaspoons baking powder
1/4 cup sugar
1/3 cup sour cream (or yogurt but I use sour cream)
1 egg yolk
1 pinch salt
4 eggs, separated
3/4 cup sugar
1 1/2 lbs cream cheese, room temperature
2/3 cup sour cream
1 teaspoon vanilla extract
2 tablespoons vanilla instant pudding mix
1 (14 ounce) can cherry pie filling, for top

Steps:

  • Crust Using a pastry blender or 2 knives cut cold margarine into flour, baking powder and sugar until pieces are the size of peas.
  • Stir in sour cream, egg yolk& salt.
  • Form into a ball& refrigerate for at least 1 hour.
  • Roll out into a circle to cover bottom& halfway up sides of a well-greased, 9 inch springform pan (you can also do this with your hands).
  • Filling Beat egg yolks until light, adding half the sugar.
  • Stir in remaining ingredients except egg whites, remaining sugar, and cherry pie filling.
  • Beat egg whites, gradually adding remaining sugar.
  • Beat until able to form stiff peaks.
  • Fold egg white mixture into cheese mixture.
  • Pour into crust.

According to my FIL, when they were dating (1955), she took him out to see her home town, Chicago, and they stopped for cheese cake at the Marshall Fields on State Street. He enjoyed it immensely, she won his heart, and they were married. When Marshall Fields stopped baking their cheese cake she searched until she found a recipe that came close. This is the result, and it is a family tradition. We call it "The Way-to-a-Texas-Boy's-Heart Cheese Cake." (Cooking time includes chill time).
