1 onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese
2 eggs, beaten
1 ½ cups seasoned croutons

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add squash and onion and cook until tender but still firm, about 15 minutes. Drain and transfer to a 2 quart casserole dish.

1 small white onion, chopped
1 (6 ounce) box chicken stove top stuffing mix
1 (10 ounce) can cream of mushroom soup
8 ounces sour cream
1 1/2 cups four-cheese Mexican blend cheese

  • Cook squash until tender, drain and mash.
  • Add onion, stove top, mushroom soup, sour cream and mix well in a large casserole dish.

8 yellow summer squash, thinly sliced
1 small yellow onion, thinly sliced
1 egg, lightly beaten
1 cup low-fat sour cream
1 sleeve buttery round crackers (such as Ritz®), crushed, divided
2 cups shredded sharp Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1-quart casserole dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash and onion, cover, and steam until squash is tender and easily mashed with a fork, 10 to 15 minutes.

1/4 cup water
2 lbs yellow squash, sliced
1 medium onion, sliced
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons melted butter, divided
3 tablespoons flour
2 eggs, slightly beaten
1 cup milk
1/2 lb sharp cheddar cheese, grated
4 tablespoons plain breadcrumbs

Steps:

  • In saucepan, bring water, squash, onion, and salt to boil.
  • Cover and simmer until squash is tender (20 min.).
  • Drain and mash.
  • Mix in pepper, 1 tbs. butter, flour, eggs and milk.
