COD BAKED IN BANANA LEAVES

Cod Baked in Banana Leaves image

This is such a fantastic way of cooking cod - you are baking it on a bed of wonderful flavours and sealing them all in with the banana leaves so the fish is really moist and tasty. You can use any fish you fancy, and if you can't get hold of any banana leaves you can use greaseproof paper instead.

Categories     side-dish

Time 45m

Yield 8 servings

Number Of Ingredients 11

4 large banana leaves
1 orange chili, finely sliced
1 yellow chili, finely sliced
1 red chili, finely sliced
1 fresh coconut, grated
1 large knob ginger, grated
1 large bunch fresh coriander, leaves roughly chopped, plus extra for garnish
3 large cod fillets, skin on, scaled and pin boned
Extra-virgin olive oil
Sea salt
3 limes, cut in half

Steps:

  • Pre-heat the oven to 220C/425 degrees F/ Gas Mark 7.
  • First you need to line a large roasting tray with the banana leaves. You do this by holding them over the hob so the whole leaf is warmed and softened (this makes it more pliable) and placing them in the tray so there is a large piece overlapping on all sides. You need to make sure there are no gaps. Sprinkle over the chili, coconut, ginger and coriander, then place the cod, skin side up, on top.
  • Drizzle with olive oil, season with sea salt and squeeze the lime juice over the top. Place the squeezed limes in the tray.
  • Fold the banana leaves over the fish to seal, and place something heavy and ovenproof on top to keep in place.
  • Place in the middle of the oven and cook for about 25 minutes.
  • When the fish is ready, remove the skin from each fillet and serve on warmed small squares of banana leaf, spooning over all the delicious juices, with a little cooked rice and a sprinkling of fresh coriander leaves.

BACON-WRAPPED MONKFISH

Bacon-wrapped monkfish image

Choose dry-cured, thinly sliced bacon for this dish - the crisp texture works well with the firm, meaty monkfish

Provided by Good Food team

Categories     Dinner, Lunch, Main course, Supper

Time 30m

Number Of Ingredients 6

400g monkfish tail, sliced into 2 fillets
2 sprigs fresh thyme , leaves stripped
12 rashers (about 140g/5oz) dry-cure rindless smoked streaky bacon
2 large tomatoes , halved
3-4 tbsp vinaigrette
225g bag watercress and salad leaves

Steps:

  • Lay 1 monkfish tail fillet on a board, sprinkle with thyme leaves and season. Lay the other fillet on top with tapering tip in the opposite direction, so each end has one thick and one thin end butted together.
  • Lay the bacon on a board, slightly overlapping and put the monkfish in the centre. Wrap the fish in the rashers so that it holds together quite firmly.
  • Heat the grill for 3-5 mins. Line the grill pan, lay the monkfish on it, with the bacon joins underneath.
  • Grill for about 7-10 mins until the bacon starts to crisp, then carefully turn over and cook for another 7-10 mins. At the same time, grill the tomato halves. As soon as the monkfish feels firm when pressed on top, remove and leave to stand for 5 mins. Save any pan juices from the paper and drizzle into the vinaigrette. Cut the monkfish into medallions, slightly on the diagonal. Dress the watercress salad with the vinaigrette and juices and divide between four plates. Place monkfish on top, season with pepper and serve tomatoes alongside. Nice with baby new potatoes.

SEARED MONKFISH WITH BALSAMIC AND SUN-DRIED TOMATOES

Seared Monkfish with Balsamic and Sun-Dried Tomatoes image

I was recently introduced to monkfish (sold as "monkfish tail" in fish markets) and it has become a new favorite of mine. It's often called "poor man's lobster" because its firm flesh and delicate, slightly sweet flavor are similar to lobster. Served with a balsamic, garlic, and sun-dried tomato topping, this recipe comes together in a snap.

Categories     Seafood     Fish

Time 20m

Yield 4

Number Of Ingredients 10

⅓ cup sun-dried tomatoes with Italian herbs, drained and chopped
3 tablespoons olive oil, divided
2 tablespoons balsamic vinegar
1 tablespoon sun-dried tomato oil
2 cloves garlic, minced
½ teaspoon white sugar
2 (12 ounce) monkfish tail fillets
1 pinch salt and ground black pepper to taste
1 tablespoon butter
2 tablespoons minced fresh parsley

Steps:

  • Combine sun-dried tomatoes, 2 tablespoons olive oil, balsamic vinegar, tomato oil, garlic, and sugar in a small bowl. Toss to coat and set aside.
  • Use a sharp knife to cut the purple translucent membrane away from each fillet. Cut each fillet crosswise into 3 to 4 pieces. Season with salt and pepper.
  • Heat 1 tablespoon olive oil and butter in a large skillet over medium-high heat. Sear monkfish until golden brown, about 3 minutes. Flip and continue cooking until opaque throughout, 2 to 3 minutes more. Reduce heat to low, remove fish to a plate, and cover with aluminum foil to keep warm.
  • Pour sun-dried tomato mixture into the skillet and quickly stir around the pan until just warmed, about 20 seconds. Spoon topping over fish and garnish with parsley.

1 (14oz) can lite coconut milk
2 tablespoons sesame seed oil

Steps:

  • • To make the banana leaves more pliable, hold for a few seconds over a gas flame. • Leaving aside the fish and herb sticks, pound the rest of the ingredients in a pestle and mortar to make a thick paste and spoon a little onto each banana leaf. • Place the fish on top and then spoon the rest of the paste on the top. Tips:

  • Choose the Freshest Ingredients: Opt for high-quality, fresh monkfish and banana leaves. Ensure the monkfish is firm and has a mild, slightly sweet aroma. Use tender and pliable banana leaves for easy wrapping.
  • Prep the Banana Leaves: To soften and make them pliable, hold them over an open flame or steam them briefly. This will prevent them from tearing during the wrapping process.
  • Marinate the Monkfish: Marinating the monkfish in a flavorful blend of ginger, cilantro, lime, and chili will infuse it with delicious aromas and enhance its taste.
  • Wrap the Monkfish Carefully: Place the marinated monkfish in the center of a softened banana leaf. Fold the leaf's sides over the fish, then wrap it tightly to secure it. Secure the packet with toothpicks or kitchen twine.
  • Steam or Grill the Packets: You can either steam or grill the banana leaf packets. Steaming preserves the delicate flavors of the fish and vegetables, while grilling imparts a smoky char. Adjust the cooking time based on the thickness of the monkfish.
  • Garnish and Serve: Once cooked, carefully unwrap the banana leaf packets and transfer the monkfish to a serving dish. Garnish with fresh cilantro, lime wedges, and chili slices. Serve with steamed rice or your favorite sides.

Conclusion:

Monkfish wrapped in banana leaves is a culinary delight that combines unique flavors and textures. The tender, flaky monkfish, infused with aromatic ginger, cilantro, lime, and chili, pairs perfectly with the delicate earthiness of the banana leaves. This dish showcases the beauty of simple, fresh ingredients, elevated by careful preparation and cooking techniques. Whether you steam or grill the packets, the result is a flavorful, healthy, and visually stunning dish that will impress your family and friends.
