- Brown beef in skillet. Drain off fat. Set meat aside. Drain artichokes reserving 1/4 c. marinade. Set artichokes aside. Heat marinade in large saucepan. Add rice and cook, stirring, until lightly browned. Add onion, garlic, saffron and ginger. Cook until onion is transparent. Stir in broth, meat, salt, pepper, garlic salt and water. Bring mixture to boil, then reduce heat. Cover and simmer 20 minutes. Lightly stir in artichokes and parsley. Cover and cook over low heat until heated through. Garnish with olives and lemon wedges.
MOROCCAN LAMB OR BEEF TAGINE WITH PEAS AND ARTICHOKES RECIPE
Steps:
- Gather the ingredients.
- Combine meat, onions, garlic, olive oil, parsley, cilantro, and spices (except for the saffron) in a pressure cooker or wide, heavy-bottomed pot. Cook over medium to medium-high heat, uncovered, for about 10 minutes, stirring several times to turn meat and brown it on all sides.
- Add about 3 cups of water, cover, and increase heat to high until pressure is achieved or liquids boil. Reduce heat to medium and cook with pressure for 25 minutes (or simmer conventionally for 40 to 60 minutes).

Once liquids have reached a simmer, continue cooking tagine for about 3 hours, checking liquids once or twice in the last hour of cooking and adding a little bit more water only if you feel it's necessary.
- The tagine is done when you can easily break meat apart with fingers. If necessary, continue simmering uncovered to reduce sauce.
- Garnish as desired with strips of preserved lemon. Serve dish directly from tagine with Moroccan bread on the side for scooping up meat and veggies.

Having cooked it several times with a slightly smaller quantity, I've changed the quantities of ingredients just a little over time to suit the smaller size and my taste (and the fact that I can't find a 9 ounce tin of tomatoes). Also, to save confusing myself when using the Recipezaar conversion, I've done it in metric.

- Heat half the olive oil in a large pan or wok and quickly brown the onion quarters over a high heat until charred and coloured well. (Break them up as you're doing this.).
- Add the carrots and the chopped garlic and stir fry for another 3 minutes. Tip carrots and onions into the tagine (or crock pot).
- Add the tinned tomatoes, dates and prunes to the tagine/crock pot and mix well.
- Add the honey and ras el hanout to the beef stock, stir well and add to the tagine/crock pot. Mix well, then add the cinnamon stick.
- Heat the remaining olive oil in the same pan in which the onions were cooked and cook the beef cubes in small batches over high heat to sear and seal them. As each batch is browned, add the beef to the tagine or crock pot.
- When all the beef is browned and in the tagine or crock pot, season with salt and pepper to taste. Ensure everything is just covered with the stock (if not add a little water). Mix well and slow cook for about 9 hours.
- When ready to serve, garnish with fresh coriander and toasted almonds.
- Serve on fluffy cous cous.
