VEGETABLE COUSCOUS PILAF

Vegetable Couscous Pilaf image

This Moroccan-style pilaf is loaded with vegetables and gets its complex flavors from cumin, almonds, caraway, and the multihued melange that comes from the tricolored couscous. We are always looking for something to take the place of rice and this seemed like a perfect candidate. This pilaf looks pretty too, with vibrant earth tones of a spice bazaar. Tips:

  • For the best results, use high-quality couscous. Look for couscous that is made from 100% durum wheat semolina and that has a slightly golden color.
  • Be sure to rinse the couscous before cooking it. This will help to remove any dust or debris and will also help to prevent the couscous from sticking together.
  • Use a large pot or Dutch oven to cook the couscous. This will give the couscous plenty of room to expand.
  • Bring the water or broth to a boil before adding the couscous. This will help to ensure that the couscous cooks evenly.
  • Once the couscous has been added to the pot, stir it gently to distribute it evenly. Then, cover the pot and reduce the heat to low. Simmer the couscous for the amount of time specified on the package directions.
  • Once the couscous is cooked, fluff it with a fork before serving. This will help to separate the grains and make the couscous light and fluffy.
  • Moroccan couscous pilaf can be served as a main course or a side dish. It is also a great addition to salads, soups, and stews.
