2 cups heavy whipping cream
1/2 cup confectioners' sugar
One 14-ounce can sweetened condensed milk
One 5.1-ounce box instant vanilla pudding
2 cups very cold half-and-half
1 cup sour cream
Pinch sea salt
One 12-ounce tin or 16-ounce box butter cookies
1 cup prepared caramel sauce
6 large bananas, sliced

Steps:

  • In a chilled bowl, with chilled beaters, beat the cream and confectioners' sugar together until soft peaks.
  • Whisk together the sweetened condensed milk, pudding mix, half-and-half, sour cream and the salt in a large bowl.
  • Reserve 4 to 6 cookies for garnish and layer half of the remaining cookies among the bottom of 4 to 6 16-ounce serving dishes (or mason jars), or in a trifle bowl (or other large glass serving dish). 2 egg yolks

Now I dont particularly like rice pudding, but my daughter and husband Philip would beg Nana to make her rice pudding whenever she would come to our house to stay. So I had Nana teach me in order to keep my family happy. Havent had a friend or family member since who didnt gobble it up when i made it. Nana was amazing, as was all her foods and desserts. I sure do miss her.

- 1/2 c uncooked rice
- 1 c water
FOR PUDDING
- 2 large eggs
- 1/2 c sugar
- 1/2 c raisins
- 2 1/2 c cold milk
- 1 1/4 t vanilla
- 1/4 t salt
- cinnamon
- whipped cream

Steps:

  • Heat rice and water to a boil in a saucpan, stirring once or twice. Then put heat on low and cover and simmer rice for about 14 minutes. Do NOT lift cover during this time. All water should be absorbed when the time is up
  • Beat eggs in a casserole dish. (1 1/2 quart ungreased dish) Beat in sugar. Now stir in raisins, milk, vanilla, salt and hot rice.
  • Sprinkle the top with cinnamon. (I use a healthy amount since my family loves cinnamon)
  • Bake in preheated 325 degree oven for about 45 minutes. Do NOT cover. Be sure to stir every 15 minutes. (Do not over bake the rice or it will curdle)
  • The top of the pudding will be wet and not set. Stir pudding well and allow to stand for 15 minutes. This is when the liquid will be absorbed and make the pudding creamy.
  • You may serve this warm or cold (my family prefers it cold, it takes about 3 hours to chill up nice when put in frig covered) When serving sprinkle with a bit more cinnamon and top with whipped cream.

MY NANNA'S STOVE TOP RICE PUDDING/RICE CUSTARD

My nanna made this for me as a child, I was a very picky eater, but I loved this. My nanna would swap between calling rice custard and rice pudding, so have decided to call it both! I have shared this on a forum and realised that I hadn't posted it. So here it is. I personally like this warm with stewed apples, but my children like it warm with ice-cream. It is also wonderful cold and re-heats well too. Sultana's can be added when cooking. Choose the condensed milk if you prefer a sweeter dessert.

1 cup glutenous rice (I like aborio)
2 cups milk, dried milk powder and water work well too (full ceam, low fat, skim you choose)
1 cup heavy cream, unwhipped or 1 cup sweetened condensed milk
1 tablespoon vanilla
1/4-2/3 cup sugar, to your personal taste
1 tablespoon cinnamon, to sprinkle over

  • Add all ingredients, exept the cinammon in a heavy based pot.
  • Cook over a low/medium heat for 35-45 minutes, stirring often until you get the texture of rice that your family likes (we like it VERY soft).
  • Do not let this boil.
  • Serve hot, warm or cold.
  • Sprinkle cinnamon over the top. I like to add homemade stewed apples.
  • If you choose to refrigerate this, wait until it has stopped steaming.
  • Careefully press the plastic wrap down and over the rice pudding so that it is touching to stop a skin forming.
