Tips:

  • Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If you must use frozen shrimp, thaw them properly before cooking.
  • Cook the shrimp until they are just opaque: Overcooked shrimp are tough and rubbery. Cook them until they are just opaque, about 2-3 minutes per side.
  • Use a good quality olive oil: Olive oil adds a rich, flavorful base to the sauce. Choose a fruity, extra virgin olive oil for the best flavor.
  • Don't overcrowd the pan: If you overcrowd the pan, the shrimp will not cook evenly. Cook the shrimp in batches if necessary.
  • Add the wine and lemon juice towards the end of cooking: This will prevent the alcohol from burning off and the lemon juice from becoming bitter.
  • Serve immediately: Shrimp scampi is best served immediately, while the shrimp are still hot and juicy.
