I got this recipe from my grandma. It is really amazing. You can use cherries, black berries, peaches, or apples in it. Sometimes you have to cook it longer than it says to cook depending on your type of oven. When you bake this use a metal baking dish because glass baking dishes tend to overcook. 1 (18 1/4 ounce) package Betty Crocker yellow cake mix or 1 (18 1/4 ounce) box butter recipe cake mix
1/2 cup margarine
1 (15 ounce) can blackberries or 1 (15 ounce) can peaches, or
apple
1 (20 ounce) can crushed pineapple in juice
chopped nuts (optional)

Steps:

  • Layer the both cans of fruit on the bottom of a metal 9"x12" baking dish. Gently stir it together.
  • Sprinkle the cake mix over the fruit and spread it evenly.
  • Drizzle the melted margarine on the top of the cake mix.
  • If desired sprinkle chopped nuts on top.
  • Bake at 350 degrees Fahrenheit for 30 to 40 minutes or until the top is lightly browned and crusty.

1 (15 ounce) can crushed pineapple
1 (18.25 ounce) package yellow cake mix
8 ounces chopped walnuts
½ cup butter

Steps:

  • In a 9x13 inch pan mix cherries and pineapple. Sprinkle dry cake mix over pineapple, and cherry mixture stir until just combined. Then sprinkle walnuts over top. Drizzle top with melted butter or margarine.
  • Bake in a 350 degree F (175 degree C) oven for 35 or 40 minutes or until golden brown.

Yesterday, while in a Thrift Shop in Paia, Maui, I found a spiral-bound cookbook called Maui's Marvelous Munchies. Many of the recipes start with a box or can of something and I always bake from scratch -- this recipe though, looks like a good go-to cake when you're in a hurry. I'm posting here to check nutritional info.

20 1/2 ounces apple pie filling (Comstock 'More Fruit')
2 eggs
2 cups sugar
1/2 cup canola oil
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups all-purpose flour
2 teaspoons baking soda
1 cup nuts (chopped)

Steps:

  • Preheat oven to 325°.
  • Grease a 9x13" pan.
  • Excluding the Chopped Nuts, put all ingredients in a mixing bowl and beat on medium speed for 3 minutes.
  • Add Chopped Nuts to mixture and pour into prepared pan and bake for 1 hour.
  • PLEASE NOTE: The instructions end with 'bake for 1 hour' but it seems to me like this would be good served warm or completely cooled.
