Time 40m

Yield 8

Number Of Ingredients 8

3 egg whites
1 cup white sugar
14 saltine crackers, finely crushed
1 teaspoon vanilla extract
¼ teaspoon baking powder
½ cup chopped pecans
7 fresh peaches - peeled, pitted, and sliced
2 cups sweetened whipped cream

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large glass or metal bowl, whip the egg whites until they can hold a peak. Gradually sprinkle in the sugar, while continuing to whip the egg whites to stiff peaks. Fold in saltines, vanilla, baking powder and pecans. Spread evenly into an ungreased 9 inch deep dish pie plate.
  • Bake for 30 minutes in the preheated oven, or until a skewer inserted into the center comes out clean. Remove from the oven, and cool. The crust will puff and crack as it cools.

Tips:

  • Use ripe, fresh peaches: The quality of your peaches will greatly impact the taste of your pie. Choose peaches that are fragrant and have a slight give when you press them.
  • Peel the peaches: Peeling the peaches is essential for a smooth, creamy filling. You can use a vegetable peeler or a paring knife to remove the skin.
  • Slice the peaches thinly: Thinly sliced peaches will cook more evenly and will create a more delicate filling.
  • Use a combination of sugar and cornstarch: The sugar will sweeten the filling, while the cornstarch will help to thicken it. You can adjust the amount of sugar and cornstarch depending on your desired sweetness and thickness.
  • Add a touch of lemon juice: Lemon juice will help to brighten the flavor of the peaches and prevent them from browning.
  • Use a pre-made pie crust or make your own: If you're short on time, you can use a pre-made pie crust. However, if you have the time, making your own pie crust is definitely worth it.
  • Don't overfill the pie crust: Overfilling the pie crust can cause the filling to bubble over and make a mess. Leave about an inch of space around the edges of the crust.
  • Brush the crust with milk or cream: Brushing the crust with milk or cream will help it to brown and give it a golden color.
  • Bake the pie at a high temperature: Baking the pie at a high temperature will help to create a flaky crust and a bubbly filling.
  • Let the pie cool before serving: Letting the pie cool before serving will allow the filling to set and the flavors to meld together.

Conclusion:

Nora Ephron's Peach Pie is a classic summer dessert that is sure to please everyone at your table. With its flaky crust, sweet and tangy filling, and beautiful presentation, this pie is perfect for any occasion.
