- Cut steak into 5mm slices across the grain 2.
- Coat in flour mixed with curry powder and salt to taste.
- Brown in butter.
- Place in ovenproof dish.
- Mix enough tomato ketchup into the whipped cream to turn it pink.
- Pour over steak.
- Cook uncovered till sauce is brown in colour.
- About 1/2-3/4 hours at 150c.
- Serve with rice.

- To prepare a fresh whale steak for cooking, wash it in a solution of 1 generous tablespoon baking soda to 1 quart water and let it soak for 1 hour. Rinse the meat and marinate it for 2 hours in 3 parts water and 1 part vinegar, with a sliced raw onion. Cut the steak across the grain in slices less than 1/2 inch thick. Sprinkle the slices with lemon juice and pound them with a mallet to tenderize them. Sauté the steaks as you would sliced beefsteak.
- To use frozen whale meat (and you are more likely to catch it frozen), thaw the meat entirely before washing and marinating it. Braise, stew, or sauté it as you would beef.

- Place lemon juice in saucepan over medium heat; simmer until lemon juice reduces to less than a tablespoon and almost disappears, 4 or 5 minutes, being careful not to let it burn. Quickly add cream; whisk to combine. Continue to cook until cream reduces and is thick enough to coat the back of a spoon, 5 or 6 minutes. Reduce heat to low.
