My sister got this recipe years ago from a Quaker Oat Bran hot cereal box. It's a nice alternative to regular pancakes that my kids always liked.

Number Of Ingredients 13

3 tablespoons vegetable oil
1/2 cup sugar
2 tablespoons molasses
2 eggs
1 cup milk
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon clove
1 cup oat bran (hot cereal)

Steps:

  • Whisk together the wet ingredients.
  • Add all dry ingredients except oat bran and mix well.
  • Stir in oat bran.
  • Fry on griddle at medium heat in a little oil or cooking spray.

2 whole eggs
3-4 tbsp oat bran
3-4 tbsp 0% fat Greek yoghurt
If you like, you can add spices to the mix to make a spicy or sweet breakfast; e.g. cinnamon, vanilla, orange essence, cocoa powder, chili flakes, garlic, thyme etc (not all together obviously!).

Steps:

  • 1. Using a whisk, mix all the ingredients in a bowl until you have a liquid and smooth batter. If the batter looks too thick, add a bit more yoghurt. 2. Lightly grease the bottom of a non-stick pan. 3. Pour in half of the mix and cook the pancake on medium heat until golden brown on both sides. 4. Repeat step 3 to cook the second pancake.

1/4 cup oat bran
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, slightly beaten
1 1/2 cups buttermilk or sour milk (see tip)
3 tablespoons cooking oil
Desired fruit options (optional)*

Steps:

  • directions 1. In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. In another bowl use a fork to combine egg, buttermilk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy). If desired, stir in desired fruit. 2. For standard-size pancakes, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet, spreading batter if necessary. For dollar-size pancakes, use about 1 tablespoon batter. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm. If desired, top with syrup. Makes 12 standard-size pancakes or 40 dollar-size pancakes.

1 cup hot oat bran, uncooked
1/2 cup flour
1/4 cup Splenda sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
2 cups buttermilk
1/4 cup egg substitute or 1 egg

Steps:

  • Heat nonstick griddle or frying pan over medium to medium high heat.
  • Combine oatbran, flour, SPLENDA, baking powder, soda, and salt into large bowl.
  • Set aside.
  • Beat together milk,egg using a wire whisk.
  • Pour the egg mixture over the dry ingredients.
  • Stir together until ingredients are just blended and no large lumps appear.
  • Using a scant 1/4 cup, pour pancake batter onto hot griddle.
  • Cook pancakes until puffed, browned and slightly dry around edges, Flip and cook other side until golden brown.
  • Serving size 2 pancakes= 2 1/2 starch.

1 c oat bran, (cream of wheat or malto)
1/2 c all purpose flour
1-2 tsp sugar
2 tsp baking soda
1 c milk or (skim milk)
1 Tbsp vegtable oil
1 egg white slightly beaten

Steps:

  • 1. Heat griddle: slightly oil it. Combine bran, flour, sugar, and baking powder. Add combined milk, oil, and egg white; mix well. Pour scant 1/4 cup batter onto griddle. Turn pancakes when tops are covered with bubbles and edges look cooked.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your pancakes will be.
  • Don't overmix the batter: Overmixing the batter will make your pancakes tough. Mix just until the ingredients are combined.
  • Cook the pancakes over medium heat: Cooking the pancakes over medium heat will help them cook evenly and prevent them from burning.
