1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup sugar
2 large eggs
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
2-3/4 cups quick-cooking oats
1-1/2 cups chocolate-covered raisins

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs. Combine flour, baking soda and pie spice; gradually add to creamed mixture and mix well. Stir in oats and raisins., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. , Flatten slightly. Bake 13-15 minutes or until golden brown. Cool 5 minutes before removing to wire racks. Store in an airtight container.

1 1/2 cups all-purpose flour
1 tsp. baking soda
1 cup (2 sticks) unsalted
butter, room temp
3/4 cup granulated sugar
3/4 cup light-brown sugar
1 egg
1 tsp. pure vanilla extract
1 1/2 cups uncooked oatmeal
1 cup dried cherries
1 cup bittersweet chocolate,
coarsely chopped
1 cup toffee pieces (Hershey's
Heath Toffee Bits)

Steps:

  • Heat oven to 350 degrees. Sift together flour and baking soda and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and both sugars on med-high speed until light and fluffy, 2-3 min. Scrape down the sides of the bowl once or twice during mixing. Add egg, and mix on high speed to combine. Add vanilla extract, mix to combine. Scrape down the sides of the bowl. Add the sifted flour a bit at a time on a low speed until well combined. Add oatmeal, cherries, chocolate, and toffee; mix to combine. Divide dough into three equal portions, and roll into logs using plastic wrap, approx. 1 1/2 inches in diameter. To bake, cut logs into 3/4 inch pieces. Bake on parchment-lines baking sheets, until golden brown, 8-10 minutes. Remove from oven, and transfer to a baking rack to cool.

11/4 c . unsalted butter
1/2 c granulated sugar
3/4 c brown sugar
1 egg
1 tsp vanilla extract
1 1/2 c all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
3 c old fashioned oatmeal
2 box chocolate raisinets

Steps:

  • 1. In a medium bowl,combine your butter and your sugars and beat till light and fluffy.Add your egg and vanilla extract, and beat well.
  • 2. Add your flour,baking soda,cinnamon,nutmeg and your salt.Mix well
  • 3. Add in your 3 cups of oatmeal,mix well
  • 4. Add in your 2 boxes of chocolate raisinets and mix well
  • 5. Drop by Tablespoons on an ungreased cookie sheet at about 2inches apart at 375 degr.for 10-12 mins
  • 6. Cool on a wire rack
