Number Of Ingredients 13

1 cup butter, softened
¾ cup white sugar
1 egg
2 tablespoons whole milk
1 ½ teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup butter, softened
3 cups confectioners' sugar
1 ½ tablespoons vanilla extract
9 tablespoons evaporated milk, or more as needed
6 cups confectioners' sugar, or more as needed

Steps:

  • Beat 1 cup softened butter with white sugar in a large bowl until creamy. Beat egg, whole milk, and 1 1/2 teaspoons vanilla extract into butter mixture until smooth. Whisk flour, baking powder, and salt in a separate bowl and gradually stir dry ingredients into moist ingredients to make a smooth dough. Chill dough in refrigerator for 2 to 3 hours.
  • Preheat oven to 400 degrees F (200 degrees C). Dust a pastry cloth or kitchen towel generously with flour.
  • Divide dough into thirds and roll each third out 1/8-inch thick on the prepared pastry cloth. Cut shapes out of the rolled dough with cookie cutters. Place cookies onto ungreased baking sheets.
  • Bake in the preheated oven until cookies are barely browned, 5 to 8 minutes. Let cookies cool on baking sheets for 5 minutes before removing to finish cooling on a wire rack.
  • Beat 1 cup softened butter, 3 cups confectioners' sugar, 1 1/2 tablespoons vanilla extract, and evaporated milk in a bowl until smooth. Gradually stir 6 cups confectioners' sugar into mixture until combined. Beat frosting hard until fluffy; stir in additional evaporated milk or confectioners' sugar if needed to reach desired consistency. Frost cooled cookies.

OLD FASHIONED BUTTER COOKIES

Old Fashioned Butter Cookies image

These are not the common butter cookies you are so used to seeing. This is an old German recipe given to me by my Aunt. I have been making these since I was married 31 years ago. They are rolled very thin, almost like a wafer than a cookie. The 6 egg yolks give it the richness that other butter cookies lack. I always look through websites and cookbooks to see if anyone else has a butter cookie recipe like this - I have not found one yet. I only updated the method to use a food processor instead of creaming the butter by hand. These are truly delicious and special.

Time 1h15m

Yield 7 dozen, 6 serving(s)

Number Of Ingredients 8

2 3/4 cups flour, sifted
1 cup granulated sugar
1/2 teaspoon baking powder
1/2 lb unsalted butter (cold)
6 egg yolks (Large Eggs)
1 1/2 teaspoons pure vanilla extract
red sugar crystals
green sugar crystals

Steps:

  • Sift dry ingredients together. Place in food processor and process a few seconds to mix. Cut each stick of butter into 8 pieces and place in food processor. Process 20 to 30 seconds until butter is cut in evenly. Add egg yolks and vanilla and process until mixture forms a ball. Remove, divide into 4 equal balls, flatten each and cover with plastic wrap. Refrigerate overnight.
  • Preheat over to 375 degrees. Cut aluminum foil to fit approximately 4 cookie sheets. Using a well floured pastry cloth and rolling pin cover, roll 1 section of dough, leaving the rest refrigerated until needed. Roll evenly approximately 1/8" thick (or actually 1/8" thin). Using small size cookies cutters, cut cookies (they should remain in the cutter, then tap out on to the foil lined cookie sheets). Place cookies 1/2 inch apart. Sprinkle with sugar crystals. (Easier to do one whole sheet red, next sheet green). Reroll scraps and roll out, trying to handle dough as little as possible. Don't reroll dough a third time, use another refrigerated section of dough. Bake approximately 8 minutes, one sheet at a time. Cookies should be slightly golden, remove quickly as once they start to brown, they could burn fast. Immediately slide foil off cookie sheet and leave cookies on foil to cool. Repeat with remaining dough. Store in a wax paper lined, cookie tin. Cookies reach their taste potential after a day and will stay fresh in a cookie tin approximatelly 3 weeks. Actual yield is based on the size cookie cutter used. I use a very small size, approximately 1 1/2 " across.

OLD FASHIONED SUGAR COOKIES

Time 4h40m

Yield 3 dozen cookies, depending on the size of the cutters

Number Of Ingredients 11

1 cup (2 sticks) unsalted butter
1 cup granulated sugar
2 eggs, lightly beaten
1 teaspoon vanilla
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
Colored sugar and milk, for decorating, or Royal Icing, recipe follows
2 pounds confectioners' sugar
1/2 cup plus 2 tablespoons meringue powder (egg white powder)
Food coloring, as desired

Steps:

  • Cream the butter and sugar in a large bowl with an electric mixer. Beat in the eggs and vanilla.
  • Combine the flour, baking powder and salt in a second large bowl and mix well. Stir the flour mixture into the butter mixture 1 cup at a time. Chill the dough for 3 to 4 hours.
  • Preheat the oven to 350 degrees F. Line a cookie sheet with parchment. Roll out the dough and cut it into shapes with cookie cutters or a knife. Place the shapes on the prepared cookie sheet. If decorating with colored sugar, brush the cookies with milk and sprinkle with colored sugar (if using royal icing, leave unfinished). Bake until the cookies are just beginning to brown around the edges, 10 to 15 minutes, depending on the size of the cookies.
  • Remove the cookies to a rack to cool completely. If using royal icing, decorate the cookies as desired.
  • Combine the confectioners' sugar, meringue powder and 3/4 cup water in a large bowl. Mix slowly with an electric mixer until stiff enough to form peaks; the icing should be pure white and thick, but not fluffy and bubbly. If the frosting is over-beaten, it will get aerated which makes it harder to work with. If this happens, let the frosting sit to settle, and then use a rubber spatula to vigorously beat and smooth out the frosting.
  • Add up to 1 tablespoon food coloring and mix with a rubber spatula until the color is uniform. Gels are best with royal icing. You don't want to thin them with liquid colors. Be careful of adding too much color, which reduces the sheen of the frosting and can break down the consistency of the frosting over a couple of days. Store the icing at room temperature, covered, with plastic wrap on the surface.
  • Yield: 3 1/2 cups icing

OLD-FASHIONED CUT OUT FROSTED BUTTER COOKIES

Old-Fashioned Cut out Frosted Butter Cookies image

I made these cookies with my mom when I was young. My daughter and I now make these every year for Christmas keeping the tradition going. This recipe comes out of a darling cookbook dated 1947 called Best Loved Foods of Christmas. The pictures and graphics are so adorable. Baking the cookies isn't always the fun part but the decorating is a blast! My daughter asks me every year about SUMMER time Mom, can we make Cutout cookies again this year LOL! I always say YES most certainly! The time it takes to make these is worth the time. If you share these with others you will get so many compliments! When I make these I break it up into a 2 day job. First day we bake the cookies and next day we decorate. These cookies also store well. I store them in a big air tight plastic container. Anyways have a blast making these. Your children or Grandchildren will grow up having fond memories of you and them baking these as I do with my Mother!

Time 35m

Yield 80 cookies

Number Of Ingredients 8

1 cup butter, softened
3/4 cup sugar
1 egg
2 tablespoons cream or 2 tablespoons milk
1/2 tsp.vanilla extract
3 cups flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl cream together the butter and sugar. Mix in the egg, milk and vanilla.
  • Now blend in the dry ingredients flour, baking powder and salt until dough is formed. If desired you can chill for an hour for easier handling. I've never done this and the dough always rolled out fine for me.
  • Divide the dough in thirds. On a lightly floured board roll out the dough to about 1/8th inch thickness. Using cookie cutters cut into shapes and place on a cookie sheet.
  • Bake in oven for about 5 to 8 minutes until lightly golden brown. Cool on a rack.
  • SPECIAL NOTE: You can use vanilla extract but I think vanilla paste makes these cookies taste even more special using vanilla paste.
  • I use vintage Christmas cookie cutters where i found on Ebay. I bought vintage cooper cookie cutters instead of the aluminum ones due to safety concerns regarding the use of aluminum. But you can use modern cookie cutters and you can make these anytime not just for Christmas.
  • Please see my recipe for Creamy Vanilla Frosting where I will be giving some decorating suggestions. =).

Baking With Care: Exploring Old-Fashioned Charm

Baking old-fashioned butter cookies with butter frosting is a delightful journey into culinary nostalgia, evoking cherished family moments and a sense of timeless comfort. To ensure a successful and enjoyable experience, consider these essential tips, techniques, and a sweet conclusion.

Proven Culinary Wisdom: Essential Baking Techniques

  • Precise Measurements: Embrace accuracy by using proper equipment, such as a kitchen scale, to ensure the ideal ingredient ratios, resulting in a perfectly calibrated bake.
  • Room for Indulgence: Before commencing the task of creating buttery delights, allow your butter to achieve a softened state to ensure proper blending and ease of creaming.
  • Mixing with Culinary Finesse: Opt for gentle care when blending ingredients. Over-beating the butter-sugar mixture could lead to a chewy result, contrasting with the desired soft and crumbly texture.
  • Flour Finesse: Employ a gentle touch when incorporating the dry ingredients, such as carefully folding them into the wet mixture. This technique helps prevent developing too much gluten, resulting in a crumbly and delectable confection.
  • Delectable Chill: After shaping the butter cookies, treat them to a brief period of refrigeration to ensure they maintain their shape during the following stage of the culinary journey.
  • Rightful Baking Companionship: Ensure that your kitchen accomplice, the trusty parchment paper, is present to prevent any overcooking or unwanted adherence of cookies to the pan.
  • Temperature Synchronization: When introducing the chilled butter cookies to the warm embrace of the kitchen dominion, allow for a few minutes of acclimation to prevent any abrupt temperature shifts, which could lead to uneven cooking.
  • Baking Ritual: Bake the cookies with vigilance, allowing them to transform into delectable morsels of joy until their delectable golden-bronze attire graces their presence.

A Culinary Crescendo: Completing Your Masterful Creation

The crowning touch, the luscious butter frosting, beckons you to ascend to culinary heights. Follow the tempo of the recipe, blending ingredients with patient care, allowing flavors to harmonize, and creating a velvety confection that perfectly complements the crumbly allure of the butter cookies.

Indulge in the art of presentation, arranging these sweet treasures upon a serving platter, each one adorned with the buttercream artistry, a visual symphony inviting taste bud temptation.
