3/4 cup uncooked long grain rice
1/2 teaspoon salt
4 cups milk
1/2 cup sugar
2 tablespoons butter
1/2 teaspoon ground cinnamon

Steps:

  • In a large heavy saucepan, bring water to a boil over medium-high heat; stir in rice and salt. Reduce heat; cover and simmer for 15 minutes or until water is absorbed. , Stir in milk and sugar. 1/3 cup sugar
1/2 teaspoon salt

  • Preheat oven to 325°. Place first four ingredients in a large saucepan; bring to a boil over medium heat, stirring constantly. 2 cups scalded milk

2 eggs, separated
1/2 cup granulated sugar
2 cups whole milk
1/2 teaspoon salt
1 teaspoon vanilla
2 cups steamed rice (I prefer brown rice, you can get brown rice in steamer bags in the freezer department at the store)
nutmeg, to sprinkle over the top

Steps:

  • Separate the eggs. Putting the egg yolks in a large bowl and the egg whites in a smaller bowl.
  • In large bowl mix egg yolks, sugar, milk, salt, and vanilla until well blended. Add steamed rice.
  • In small bowl beat egg whites until stiff and stand in peaks.
  • . Fold beaten egg whites into egg, milk mixture, pour into 1 1/2 quart baking dish. Sprinkle top with ground nutmeg.
  • Bake in 350 degree oven for 60 minutes or until knife inserted in center comes out clean.
