James Beard took this recipe from his colleagues Irma and Bill Rhode over 60 years ago, but there's something delicate, fresh and unfussy about the sandwich even now. There isn't much to it, so each component really matters: Slice the onions thinly and evenly, season well, and be gentle so you don't squish the bread as you press each sandwich shut. Rolling the edge of the sandwich in chopped parsley (or a mix of parsley and other fresh herbs), gives it a retro styling touch, but it's crucial for flavor, too.

1 loaf challah or brioche, sliced about 1/4-inch thick
1/2 cup mayonnaise
1 to 2 sweet white onions, such as Vidalia
Crunchy sea salt, to taste
1 cup fresh herbs, such as parsley, or a mix of parsley, tarragon and marjoram, chopped

Steps:

  • Using a 1 1/2-inch cutter, cut 24 rounds from the bread and arrange in 12 pairs. Spread each round with mayonnaise.
  • Slice the onions through the equator, evenly and thinly, and put a slice that fits the bread on half the bread rounds. Salt lightly, then cover with a second round of bread.
  • When sandwiches are assembled, spread remaining mayonnaise on a piece of parchment paper, and have the chopped herbs ready in a bowl.
  • Hold a sandwich, and roll the edge in mayonnaise, then in the chopped herbs, covering the edge. Cover and chill for about 1 hour and up to 6 hours before serving.

1 large red onion, sliced
3 tablespoons brown sugar
1/4 cup red wine vinegar
3 tablespoons water
1/2 pound Taleggio, cut into 8 slices
1/4 pound Gorgonzola, cut into 4 slices
4 tablespoons butter, softened
1 loaf crusty rustic Italian bread, sliced

Steps:

  • Heat the olive oil in a large skillet over medium-low heat. Add the onions and cook until soft and translucent about 10 to 15 minutes. Add the sugar, red wine vinegar and 3 tablespoons water and cook until the liquid is reduced completely and the onions are caramelized, about 10 minutes. Set aside.
  • Butter the outside of each slice of bread and arrange, butter side down, on a sheet pan. Put 1 piece of Taleggio onto a slice of the buttered bread, then a piece of Gorgonzola. Top with a heaping tablespoon of the onion jam, and another slice of the Taleggio. Cover it another slice of bread. Repeat with remaining ingredients.
  • Heat a large skillet over medium-low heat. Put the sandwiches into the skillet and cook until the bread is toasted and golden and cheese is melted, about 4 minutes per side. Slice each sandwich in half and serve.

1 large sweet onion, thinly sliced (Walla Walla type)
2 garlic cloves, smashed
1/8 teaspoon cayenne pepper
1 teaspoon Worcestershire sauce

2 tablespoons balsamic vinegar
12 -16 ounces sirloin tip steaks or 12 -16 ounces flank steaks
1/4 cup beef stock or 1/4 cup red wine
4 slices of your favourite thick toasted bread

  • Slice onion into very thin slices, separate rings; set aside.
  • Slice steak, across the grain, into very thin slices, place in a zip lock bag, add cayenne pepper, Worcestershire sauce, oyster sauce and balsamic vinegar to zip lock bag.
  • Squeeze out air and massage bag to distribute sauces and vinegar through steak; set aside.

1 teaspoon garlic powder
1 teaspoon salt
Canola oil, for frying
2 large onions, cut into 3/4-inch-thick rings
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon salt
Pinch cayenne
1 stick (8 tablespoons) butter
1/2 cup all-purpose flour
1 quart whole milk, cold
12 ounces fontina cheese, grated
2 shots Tabasco sauce
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons whole-grain mustard
1 seeded semolina roll, cut in half
8 ounces fontina cheese, sliced
Jarred sliced banana peppers
Handful of arugula

Steps:

  • For the steak: Preheat a grill pan over medium-high heat. Sprinkle the steak on both sides with the garlic powder and salt. Place on the grill pan and cook for 5 to 7 minutes; flip and cook for an additional 3 to 5 minutes, until medium rare. Remove to a cutting board and set aside to rest. Slice the steak on the bias.
  • For the onion rings: Fit a heavy-bottomed pot with a deep-frying thermometer and fill with 2 to 3 inches of oil. Heat the oil to 365 degrees F. Meanwhile, prepare one bowl with buttermilk and a second with flour, salt and cayenne. In batches, place the cut onion rings into the buttermilk and then into the flour; repeat one more time. Carefully place the dipped rings into the preheated oil, being sure not to overcrowd the pan. Once golden on one side, flip to the other side and fry until golden brown all around. Remove with a slotted spoon to a paper-towel-lined plate. Season with salt.
  • For the mustard cheese sauce: Melt the butter in a medium saucepan. Add the flour and whisk together completely to make a roux. Whisking continuously, gradually add the cold milk until completely combined and the sauce starts to thicken into a bechamel. Add the fontina, Tabasco and Dijon and whole-grain mustards. Season to taste, then remove from the heat.
  • To assemble the sandwich: Smear the cheese sauce on each side of the bread, top with sliced fontina, banana peppers, steak and arugula. Serve the onion rings on the side.

Steps:

  • Arrange bread in a single layer on a clean work surface. Stir together butter and mayonnaise. Spread mixture evenly onto one side of every slice (1 scant tablespoon per slice).
  • Heat a large skillet, preferably cast iron, over medium. Flip over bread on work surface (so it's plain-side up). Spread Dijon evenly onto 4 slices. Spread onion jam onto remaining 4 slices and top evenly with cheese. Carefully sandwich together.

This is from Graham Kerr, the man who said, "If you are out of salted nuts, the best appetiser is champagne!" This is from Volume 1 of his CBC Television Cookbooks. I also have Volume 3 and it was published in 1969, so this recipe is some kind of late 1960s cocktail party creation. Graham's recipe notes include: "At heart this is a dish that everyone enjoys except those with ulcers and those who have a romantic meeting with someone who isn't at the party." and, "Vodka based creations blend well." I use party rye-sized pumpernickel bread for the "brown bread rounds" he writes of; also, this recipe is for 2 people only so increase if you're serving a crowd (makes a great summer party treat) but don't make them too far ahead.

1 (6-pound) pork shoulder

1/4 cup rice wine vinegar
2 tablespoons Dijon mustard
2 teaspoons honey
1/2 teaspoon whole black peppercorns

1/2 cup plus 2 tablespoons canola/olive oil blend

1 cup coarsely chopped green onions
1/4 cup red wine vinegar
2 serrano chiles
2 tablespoons mayonnaise

Steps:

  • For the Dry Rub: Add all the dry rub ingredients into a medium-sized bowl and stir until thoroughly combined.
  • For the pork shoulder: Place the pork, fat side up, on a clean baking sheet. Season the pork on all sides with salt and pepper then rub the dry rub all over the pork, pressing into the meat. Cover the pork with plastic wrap and place into the refrigerator for 7 hours.
  • Black Pepper Vinegar Sauce: Place all the ingredients into a blender and blend until emulsified. Add water if the sauce is too thick.
  • Green Onion Slaw: Place the green onions, vinegar, chiles, mayonnaise, salt, pepper and oil into a blender and blend until emulsified. Place the cabbage and red onions in a bowl, add the dressing and stir until combined. Fold in the cilantro and season with salt and pepper, to taste.
  • For the pork shoulder: Remove the pork from the refrigerator 30 minutes prior to cooking. Following manufacturer's instructions and using lump charcoal and 1/2 cup drained wood chips for a smoker, or 1 cup for a barbecue, start fire and bring temperature of smoker or barbecue to 225 degrees F to 250 degrees F. Place the pork on the rack in smoker or barbecue. Cover and cook until an instant-read thermometer inserted into the center of the pork reaches 165 degrees F. Turn pork every 45 minutes, about 6 hours total. If using the smoker, after 2 hours place the pork into the smoker pan and fill halfway with chicken stock. (This is to prevent the shoulder from drying out.) Add more charcoal, as needed, to maintain 225 degrees F to 250 degrees F and more wood drained wood chips (1/2 cup for the smoker or 1 cup for the barbecue with each addition) to maintain smoke level. Transfer pork to a clean rimmed baking sheet. Let stand until cool enough to handle. Shred into bite-size pieces. Mound on platter and toss with most of the Black Pepper Vinegar Sauce, reserving the rest for drizzling the bun. Pour any juice from the baking sheet over the pork.
  • For assembly: Drizzle the sauce on the top and bottom of the bun. Top the bottom bun with the meat, another drizzle of sauce, Green Onion Slaw and finish with the top of the bun.

1 pound skirt steak

8 slices crusty bread

Steps:

  • In a large baking dish, whisk together mustard, 1 tablespoon vinegar, and 2 tablespoons oil. Season with salt and pepper. Add steak and turn to coat; let sit 15 minutes at room temperature. Heat a grill pan or cast-iron skillet over medium-high. Drizzle onion with 1 teaspoon oil and season with salt and pepper. 4 ounces of cheddar cheese
2 Tbsp finely chopped sweet onion
2 Tbsp finely sliced scallions, with greens
2 Tbsp mayonnaise
salt and peper to taste
4 slices of bread, toasted or untoasted
butter

Steps:

  • 1. Grate the cheese in a bowl.
  • 2. Add the onions and mayonnaise.
  • 3. Salt and pepper to taste.
  • 4. Mix all ingredients together.
  • 5. Spread butter on your bread.

8 slices white sandwich bread
4 tablespoons unsalted butter, room temperature
1/2 small sweet onion, sliced into 1/8-inch-thick rounds
Flaky sea salt

Steps:

  • Using cutter, punch a round from each slice of bread. Spread both sides with butter and top 4 rounds with 2 onion slices each; season with salt and pepper. Close sandwiches.

2 tablespoons olive oil
20 g butter
1 brown onion (sliced)
1 teaspoon thyme leaves
2 teaspoons brown sugar
1 tablespoon balsamic vinegar
4 (110 g) minute steaks (beef)
2 French baguettes (small halved lengthwise)
2 tablespoons horseradish cream
8 slices cheddar cheese
60 g rocket (baby leaves)

Steps:

  • Heat 1 tablespoon of the oil and the butter in a non stick frying pan over low heat and add the onion and thyme and cook for 10 minutes or until onion is softened and then add the sugar and balsamic vinegar and cook for a further 8-10 minutes till caramilsed.
  • Heat the remaining oil in a non stick frying pan and cook the steaks for 1-2 minutes per side or until cooked to your liking (better I think to do a little under as it will go under the grill/broiler for a minute or two).
  • Spread half a tablespoon of the horseradish cream over each baguette half and top with the steak and cheese.
  • Place under a preheated hot grill/broiler and cook for 2-3 minutes or until cheese is melted and golden.
  • Top with caramelised onion and rocket, halve each half baquette to serve.
