One 15.25-ounce box red velvet cake mix
4 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 1/2 sticks (12 tablespoons) unsalted butter, melted and cooled
8 ounces cream cheese, at room temperature
3 cups confectioners' sugar
4 cups confectioners' sugar
3 tablespoons meringue powder
Sprinkles, for decorating, optional

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Line a 9-by-13-inch cake pan with aluminum foil and spray with nonstick baking spray.

3 eggs (divided)
