- In a large bowl, mix together the fat substitute, honey, and sucrolose sweetener until smooth. Mix in the vanilla and orange zest. Add the dry ingredients, and mix until well blended. Finally, stir in the chopped candied ginger and cranberries. Drop by heaping teaspoonfuls onto the prepared baking sheets. Cookies should be spaced at least 2 inches apart.

- Place pineapple juice in a 2-cup measuring cup and add enough cold orange juice to make 1 1/2 cups liquid.

- 1. For jello mixture: Bring water to a boil, add Jell-O, stirring until clear. Remove from heat. Add frozen orange juice concentrate and stir until melted. Stir in mandarin oranges and pineapple. Pour into an 11 x 7 dish and refrigerate overnight or until the jello mixture has completely set.

Ignore the directions on the cake mix box and mix as follows: With a fork or large spoon, beat the cake mix, pie filling*, eggs and sour cream together for about 1 minute (Make sure it is well blended).
