ROASTED ACORN SQUASH STUFFED WITH RISOTTO

Roasted Acorn Squash Stuffed with Risotto image

Provided by Marc Murphy

Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 11

4 medium acorn squash
Kosher salt
2 cups whole milk
1 tablespoon olive oil
2 tablespoons olive oil
1 medium onion, diced
1 cup arborio rice
1 cup white wine
3 cups chicken or vegetable broth, plus more as needed
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • For the squash: Preheat the oven to 400 degrees F.
  • Divide 3 of the squash lengthwise and remove the seeds. Place the 6 squash halves cut-side up in a large, high-sided ovenproof skillet or pot (you may need to do this in batches or two pots). Sprinkle the cut sides all over with salt, then pour the milk into the cavities, filling halfway. Pour water into the pot until it reaches halfway up the sides of the squash. Carefully place in the oven and roast uncovered until fork-tender, 35 to 40 minutes.
  • Meanwhile, peel, seed and dice the remaining squash. Place in a roasting pan along with the olive oil and a pinch of salt. Toss and roast until fork-tender, 15 to 20 minutes.
  • For the risotto: Add the olive oil to a large skillet over medium heat. Add the onions and saute until they are translucent, about 2 minutes. Add the rice and stir to coat with the olive oil and onion mixture. Add the white wine and stir until the liquid has absorbed, about 5 minutes. Add the broth, 1/2 cup at a time, and stir until all the liquid has absorbed before adding another 1/2 cup. (This process will take approximately 25 minutes and the risotto will become creamy from the starch releasing.) When all of the liquid has been added and absorbed, stir in the Parmesan and the roasted, diced squash. Season to taste with salt and pepper. (If the risotto seems too dry, just add some more broth).
  • Stuff the roasted squash halves with the risotto and serve.

ROASTED ACORN SQUASH WITH POMEGRANATE AND GOAT CHEESE

Roasted Acorn Squash with Pomegranate and Goat Cheese image

Acorn squash is one of my favorites for the holidays. This holiday treat adds some color and flavor to the table. You can sub out kabocha squash for this recipe if you prefer. Balsamic vinegar is also a great substitute for maple syrup.

Categories     side-dish

Time 1h10m

Yield 2 to 4 servings

Number Of Ingredients 8

2 acorn squash
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 to 8 sprigs thyme
Ground cumin, for sprinkling
1/4 cup maple syrup, warmed
1/2 cup pomegranate seeds
1/2 cup crumbled goat cheese

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet tray with parchment paper.
  • Wash the two whole squash under running water and pat dry. Cut the squash in half by inserting the tip of a chef's knife in the center of the squash where the stem connects. Push the tip in until it has cut all the way through the skin and flesh, then press down firmly on the handle, bringing the heel of the blade all the way to the cutting board. Turn the squash 180 degrees and repeat on the other side, splitting the squash. Scrape out the seeds with a spoon.
  • Slice the squash into 1/2-inch-thick slices. Heat a 14-inch cast-iron pan over medium-high heat and add the olive oil. Once heated, add the squash in an even layer. Season with salt and pepper and sear on the first side until lightly golden brown, about 3 minutes, in batches if needed. Place the seared squash on the prepared sheet tray, seared-side down, and season the top side with salt and pepper. Scatter the thyme sprigs over the squash and put into the oven. Roast until the edges are brown and the squash is tender in the middle, 20 to 30 minutes.
  • Transfer the squash to a large bowl, season with more salt, pepper and cumin to taste. Drizzle with the warmed syrup and toss to combine. Pour onto a platter and sprinkle with the pomegranate seeds and goat cheese.

Tips:

  • Choose the right squash: Acorn squash is a great choice for this recipe because it is small and has a sweet flavor. Look for squash that is about the size of your palm and has a deep green color.
  • Cook the orzo al dente: Orzo is a small pasta that cooks quickly. Be sure to cook it al dente, or slightly firm to the bite, so that it doesn't get mushy in the oven.
  • Use a good quality cheese: The cheese is one of the main ingredients in this dish, so it's important to use a good quality cheese that melts well. Some good options include cheddar, mozzarella, and Parmesan.
  • Season the squash and orzo well: Be sure to season the squash and orzo with salt, pepper, and other herbs and spices to taste. This will help to bring out the flavor of the dish.
  • Don't overcook the squash: The squash should be tender but still slightly firm. If you overcook it, it will become mushy and watery.

Conclusion:

Orzo and cheese baked in acorn squash is a delicious and easy-to-make dish that is perfect for a fall meal. The squash provides a sweet and savory flavor, while the orzo and cheese add a creamy and satisfying texture. This dish is also a great way to use up leftover orzo or squash.
