ORZO WITH LEMON AND HERBS
Orzo is popular to Italy and to Greece as well. This is a great side dish, or do as I do, by placing roasted chicken on top. I have also eaten this room temperature, with some great Italian bread and a glass of white wine. (I said I have done it, not that I do it on a regular basis)! LOL! Enjoy! Note: to get more juice out of your lemon, roll it on your counter or cutting board, applying some pressure;it will yield more juice, or microwave it for about 10 seconds or so. This is a low calorie dish weighing in at about 250 calories.

Tips:

- Don't overcrowd the pan: When cooking the orzo, make sure to use a large enough pan so that the pasta has plenty of room to cook evenly.
- Cook the orzo al dente: Orzo should be cooked al dente, meaning it should be slightly firm to the bite. This will help it hold its shape and prevent it from becoming mushy.
- Use a flavorful stock: The stock you use to cook the orzo will add a lot of flavor to the dish. Use a stock that is made with real ingredients and has a good flavor.
- Add the herbs at the end: Fresh herbs are best added at the end of the cooking process so that they retain their flavor and aroma.
